Notes: Oxygenate during knock out @ 70 degrees F. 400ML 1056 slurry from Get Sum. Water back to 14.5 gallons. No mash salts, only gypsum 1 tbsp in kettle. Yeast nutrient sprinkled in kettle @ whirlpool.
FERMENTATION NOTES**Huge Krausen**
Activity 3 hours after pitch, 70-72ºF first 24 hours. Fridge died 24-36hrs 82ºF, 36-48hrs fridge cooled down 68-70ºF, good fermentation for 8 full days.
Pulled yeast and dry hopped day 16. FG 2.9ºP

Notes: Here is a homebrew-scale recipe for Grains of Wrath’s Citra-hopped West Coast–style IPA, which scored a 99 with our blind panel earlier this year, delighted our editors, and became one of our Best 20 Beers of 2020. According to Mike Hunsaker, cofounder and brewer, the beer “brings bright citrus and tropical notes balanced with a smooth, easy malt back.”
Mill the grains and mash at 152°F (67°C) for 45 minutes, going for a mash pH between 5.2 and 5.3. Vorlauf until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6.8 gallons (26 liters) of wort—or more, depending on your evaporation rate. Boil for 90 minutes, following the hops and additions schedule. After flameout, cool the wort to 180°F (82°C), add the whirlpool hops, spin the wort for 10 minutes, then rest for 20 minutes. Chill the wort to about 65°F (18°C), aerate well, and pitch the yeast. Ferment at 67°F (19°C). Three days after the beer reaches final gravity, rack to secondary (or remove yeast, if using a conical). After another day, add the dry hops. After 5 more days, do a force test to check for diacetyl (see “Hunting for Diacetyl,” beerandbrewing.com). After 2 days in a row of negative tests, crash, package, and carbonate. |

Notes: Mash in at 154° F (68° C) for 30 minutes. Raise temperature to 168° F (78° C) for 30 minutes. Boil for 75 minutes. Use one (1) Whirlfloc tablet for 10 minutes.
Primary fermentation at 65° F to 70° F (18-21° C).
Secondary fermentation at 68° F (20° C).
Nathan Zorich’s No Quarter Smoked Porter recipe isn’t for the faint hearted. At a tantalizing 100+ IBUs, this beer will test your taste buds – and you’re spirit – but don’t let that deter you.
The Chinook hops, with their high alpha acid percentage, will give this smoked porter a blow-your-taste-buds-off approach. But, don’t be frightened so easily. The Cascade hops should give the beer a subtle fragrant, floral aroma and citrus-floral hop character, while the steeping Willamette hops should provide some spicy, woody aromas to an already smokey beer.
This beer stands up to its name, showing no mercy on your taste buds. But, in the end, it’s up to you. Do you think you can handle it? |
