Soft sydney water profile - did light and hoppy.
Mash for 30 minutes at 70C
Pitch yeast at 16.6C, manintain at 17.5C until it hits 1.014 in 24 hours, then crash chill to 13.8C

MASH
Water Volume: 3.6 gallons for ~1.1lb/qt ratio.
Prior to heating HLT, check pH of tap water + add Salts/LA to achieve Goal water.

SPARGE
Heat 7-8gal of Water to 174F. Add to Sparge Vessel.
Recirculate 4 times (or until clear running's) prior to collecting wort.
Attempt to Sparge over ~20 minutes, collect 8 gal into boil kettle.

Check Pre-Boil Gravity (goal: 1.039) + pH

Drain wort from Kettle into Mash Cooler with Hop Cylinder + fine mesh bag attached (at the end of auto-siphon)
Gravity feed 5.25gal (20L Mark) of wort from Mash Cooler into Catalyst Fermenter
Allow Ranco/Chest Freezer to adjust wort temperature to goal starting temp (cool to 60F).
Prior to pitching yeast, dump 1 Mason Jar of "trub."

Notes: 35-ös IBU-t keserűből a maradék kb 5-öt a végén. Német komlók amit találok. 50g alatt legyen az aromakomló. KB valami ilyesmi víz kéne Ca,Mg,Cl, SO4 59:8:63:89.
Maris Otter azért van benne, mert a boltban 1 zsákba roppantották a floor malted pilsnerrel. :D
Bekeverés 20 liter 50 fokos vízbe. 2gCaCl, 4g CaSo4, tejsav, hogy a ph 5,3körül legyen.
10 perc 50 fokon. 50 perc 66 fokon. 66 fokon kb 15 perc után a fele sűrűjét kiveszem és 10 percig forralom egy edényben majd 65 fokra visszahűtve hideg vízzel visszakeverem a többihez.
10 perc 72 fokon majd a maradék vízzel (kb 78 fokos) átmosom.
Összesen kb 30 liter víz kell. 2-3 liter elforr, 3 litert a gabona elnyel és marad trutyi is.
Élesztő: előző főzetből kb 2 dl w34/70 trutyi.
Erjesztés: 12 fokon 6 nap, 15 fok 6 nap, 2 nap 5 fok majd mehet (Sietni kellett, mert közelgett a verseny) kegbe.
Megjegyzés: A sör 1. lett a 2020-as magyar nemzeti sörfőző versenyen.
Javítandó: nagyon kicsit több IBU (kalkulátor szerintem alá lőtt). Enyhe DMS íz.
Következőre gyorsabb hűtés. Valamivel több Magnum. Talán kicsit lasabb erjesztés. Több ászokolási idő. (a versenyig kb 2 hete volt csak.) A sör hétről hétre jobban összeérik. |
