Notes: Mashed pilsner and wheat malt for 30 minutes at 150* before adding acidulated malt and lactic acid to the mash. After 75 min total mash, recirc'd as usual, filled kettle w/ 6.5 gal wort, raised wort to boil, skimmed precipitate, and rested 10 minutes to kill wild yeasts, then chilled to 95. Pitched lacto, purged kettle, sealed up lid w/ saran wrap. Kettle sat in hot 80*+ garage.
After souring, brought to boil, added salt, coriander and hops, gently boiled 20 minutes. Chilled to 70* and racked to fermenter, oxygenated and pitched 1 pack US-05. Plan to directly keg after 10 days with DME. |

Notes: Aroma hops are not used in boil, but are added as a method to stop fermenting for the lacto pills. This is a no hop boil.
Once wort added to fermenter, add lacto pills (use a starter to ensure viability of lacto pills). After 24 - 48 hours or testing with Ph meter, do the hop tea. Boil some water, then add the hops and boil for a couple of minutes to get a little bitterness, it should be thick but pourable.
14g of lemon zest and 14g lime zest are for making 2 separate extracts using vodka. Add zest to small glass container with lid, cover with vodka for a week, swirl occasionally. Filter out the zest so you only have the extract (liquid) left. Use a dropper or something to control how much is added. Add at kegging or bottling and gently mix it in and taste to get the proper flavor, add more salt if needed as well.
This is the first brew of parti-gyle, second is the 2021 Terrapin NEIPA with additional grains added to mash. Have enough liquid for first running to be around 6 gallons.
