Notes: Based on 1849 Barclay Perkins Porter from Ron Patterson. IBU toned down to suit my taste and suger added to tune ABV. No sugar in original recipe. My usual dry yeast (hence BB).
Mash in 65C, 10min @65, 20min @66 and 30min @67C. Mash out 1min@77C (Ace microbrewery). Boil 60mins.
Fermented in 2 days but bottled at 7 days. (1.052(excess water due to profile, 17.2l)-1.016) |

Notes: 1. Mash in @ 117 F with 3.5 gal (frulic acid rest) 10-15 minutes
2. Mix and pull 1/3 of the mash (with max grains but not min water) to start two different mashes...
Main Mash (2/3 of the mash) -- "m"
Decoct mash (1/3 of the mash) -- "d"
1m. Add 1.7 gallons of boiling water --> 150 F
1d. While m sits, heat to 158 while stirring constantly and hold for 20, then boil for 10 minutes.
2. Combine m and d, and hold for 10 minutes. The dream is 155 F.
3. Mash out at 170 F with 2.25 gallons water. 10 minutes
4. Sparge with 1.25 gals at 170.

| Notes: Start fermentation at 61 then after 2 days raise to 64, when you get around 1.015 gravity reading raise temp to 66 for a couple days for a diacetyl rest. When diacytel rest is complete lower back to low end of yeast temp. Range and rest on yeast cake for 5 days. Transfer to keg and lager for 3 weeks @36. Carbonate to 2.5 volumes of co2. |
