| Notes: Add pumpkin puree during main boil, just after steeping. Add spices at the end of the boil, steep for 15 minutes (DO NOT BOIL). Also possible to take a small sanitized pot with the spices to the side at the end of the boil to steep separately while you chill your wort. Strain and add back into wort before fermenting. This will leave very fresh and clean spice flavors, boiling them will dull them out. I plan on running this batch in a fermzilla at 10psi then coldcrashing for 2 days before bottling. This recipe was taken from "How to Brew" by John J Palmer. Should be a good one! |

Notes: 42 L of water. Heat to 50c
# 1 1tbsp of gypsum
# 2 2 tbsp of Acid
Add 6 ml of Tx ( Protein busting enzyme
Add 16 ml of hightemp enzyms
Add Grain and slowly heat water to 75c
Turn off heat and hold at 75c for around 60min
try to get 15 Brix at that point
Drop temp 65c with chiller add 6 ml Amly 300 ( amyloglucosidase enzyme and 4ml of Tx ( Protein busting enzyme) Check ph should be 5.5
Hold 60c for around 45min till you get a good test and 18-20 brix
Drain off wort and chill to 25c
Add 13L of 165f sparge water to the grain bed let it sit for 15 min and drain

Notes: make wort and bring to boil (to sanitize), then pitch 100B cells Lacto at 100F. Keep at 100F until pH is 3.3. Then boil for 20 minutes with hops. Ferment with yeast.
Puree and sanitize fruit with potassium metabisulfite (calculate dosage). Add after fermentation is complete.
