Notes: BATCH-SPARGE STEPS
1. Increase grain quantities by 1.06x.
2. Mash with 2.38 gal water.
3. After mashing, add 1.86 gal water.
4. Stir and allow to rest a few minutes.
5. Recirculate wort till clear.
6. Run off 3.25 gal wort @ 1.096 SG.
7. After runoff, add 3.25 gal water.
8. Stir and allow to rest a few minutes.
9. Recirculate wort till clear.
10. Run off 3.25 gal wort @ 1.022 SG.
Honey added at flame out.
Place honey bottles in warm water to make honey runny before adding to kettle.
Calculation for displacement of liquid from addition of honey.
BV – (H / 12) = WV
Where BV is the target batch volume in gallons (the volume left after the boil), H is the quantity of honey in pounds, and WV is the wort volume (in gallons) you should transfer from the kettle to the fermenter.
Total volume of wort after boil = 5.5 gallons
adding 6 lbs of honey at the end of the boil will result in 6 gallons to the fermenter.

With various itterative refinements.
Yeast Starter -
1 packet of S-04 yeast
Using stir-plate
DME Required: 175 g in 1.7L (1.036 wort)
Resulting Pitch Rate: 1.08M cells / mL / °P
Added 1/2 tsp yeast nutrient and boiled for 10 mins.
Cooled to 15'C, airated, and added yeast.
On stirrer for 18h. Raised grad to 17'C.
Off stirrer for 36h.
Settled and cleared nicely without need for refrigeration.
Reduced temp to 15'C slowly before pitching.
Fermentation Temperature Control -
S-04 appears to the the optimal yeast to use for this recipe, but it is CRITICAL with this yeast to maintain careful fermentation temperature control.
With S-04, it is highly recommended to ferment and pitch very cool. Recommend pitching at ~60F (15.6'C) and fermenting no higher than 63F (17.2'C). Ideally no higher than 65'C (18.3'C), and absolutely not above 68'F (20'C).
Fermentation and Dry hopping -
Only using a primary fermenter for full process (to avoid any unnecessary oxidation or risk of contamination).
Ferment for 14 days just to be safe, then toss in dry hop for 10 days (hop pellets loose in fermenter - no hop bag), then cold crash for a few more days, and then keg. cold crashing is important for high hopped beers like this else their flavour could more quickly deteriorate over time due to any remaining hop material left in suspension when kegging.
Have thinned out the mash from my initial attempt for better mixing and easier temperature control.
Have left brewhouse efficiency at 70%, although achieved 85% on 1st attempt at this recipe, resulting in higher ABV than planned. |

Notes: 1.25 qt/lb mash thickness. Single infusion mash at 152F for 90 mins. Mashout to 168F and hold for 10 mins.
60-90 min fly sparge with ~5.6-5.8 pH water (measured at mash temperature). Collect 14.4 gallons in the boil kettle.
Boil for 60 minutes. Lid on at flameout, start chilling immediately.
Cool wort to 66F and aerate well. Ferment at 66-68F until complete. Dry hop for 5-7 days.
Rack to a CO2 purged brite tank (secondary), crash chill to near freezing (if possible), add 1 tsp of unflavoured gelatin dissolved in a cup of hot distilled water per 5 gallons of beer, and let clear for 2-3 days.
Package as you would normally. I keg and carbonate on the low side (around 2 to 2.2 volumes of C02) to minimize carbonic bite and let the hop/malt flavour come through.

If we wanted it more malty and like real beer then we will need some speciality grains which would probably add 5 or 10 bucks on top. Also could go with a higher quality base malt but that would be more like a dollar a pound. Misc expenses for various things will add about 5 to 10 bucks too. Puts the total batch cost at about 25 to 35 dollars depending. |

Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash.
For the vanilla bean vodka solution, two vanilla beans are cut in half. The seeds and goodies are then scraped into 4oz of vodka. Let the vodka sit for two weeks. |
