Our Unleash the Yeast series was an epic experiment into the differences in aroma and flavour provided by switching up your yeast. We brewed up a wort with a light caramel note and some toasty biscuit flavour, and hopped it with Amarillo and Centennial for a citrusy bitterness. Everything else is down to the yeast. Pilsner yeast ferments with no fruity esters or spicy phenols, although it can add a hint of butterscotch. Play around with the fermentation temperature to get the best flavour profile from the individual yeasts.

My own take on a steam beer, inspired by a couple traditional styles without trying to emulate them exactly. My goal here is an easy drinking beer.
Brew day 03Dec2023:
- Added 1ml lactic to mash.
- pH est = 5.49. Act. = 5.57. Added 2ml extra lactic. Overshot. pH = 5.29. Added big pitch of baking soda. Good enough.
- OG = 5.35 gal @ 11.8 brix (1.048)
- Pitched yeast @ 58F.
Kegging 22Dec2023:
- FG = 1.006.
- That's 87% attenuation (wtf?), and 5.5% abv |

Notes: Add 1 lb dextrose at flame out if needed to hit target gravity.
Ferment at 68–70°F (20–21°C).
When the gravity has dropped to the 1.020–1.024 range, add first dry hops. After a few more days, when fermentation has stopped, add second dry hops (dumping the previous hop trub, if possible). After 3 more days, crash, package, and carbonate to about 2.5 volumes of CO2.
Target OG is 1.011
