Notes: I have made this in the past using malt extract and this time I going with grain instead of extract. I found this article on conversion - https://www.beginbrewing.com/2015/07/how-to-convert-between-grain-lme-and-dme.html I have no idea what the points per pound are so I will just go with the formula they have. 4 pounds of light DME X 36/27 = 5.33 pound of two row malt. The calculation example was for light DME and last time I used extra light DME, so I am going with 5 pounds of two row malt.
I also switched from Cascade Hops to Motueka as I had an ounce in the refrigerator and the description sounds perfect for this, fresh lime, lemon zest, mojito, citrus.
I had to manually add the Mountain Dew as a custom fermentable. I am using 5, 2 liter bottles and am adding it to the fermenter and not boiling it. |

Notes: Step mash for 45 minutes at 105 °F (41 °C),
30 minutes at 140 °F (60 °C),
raise over 30 minutes to 160 °F (71 °C),
hold for 15 minutes before mashing out.
Ferment at 68 °F (20 °C) for 7-10 days.
Add 12oz Cherry Juice Concentrate at 4 days.
Condition in secondary at 40 °F (4 °C) for 1-2 weeks. |

Notes: Hoofdzaak blijft na de hoofdgisting suiker + Orvalgist toe te voegen en dan rustig enkele weken naar het einde toe naar 15° laten zakken.
Orvalgist kweek ik inderdaad op uit jonge flesjes. Gaat behoorlijk vlot. Na opkweek koelkast in.
Op brouwdag maak ik er dan een starter mee van wort dat ik opvang uit draf en hopresten (steevast toch een 1,5 liter). Die gaat op dag 5 van of net na de hoofdgisting (met Rochefortgist) bij het wort, samen met de kandijsuiker.
Voldoende lang laten nagisten, reken toch maandje, waarbij laatste 2 weken op 15°. Dan voeg ik ook de koudhop toe.
Bottelen was met 7 g suiker/liter. hergisting op fles niet té warm (20° beginnen, na week 15°), maar wel voldoende lang. |

Zacieralem w 23 l wody, w temp początkowo 65 C, pozniej w zakresie 62-65 C. Przed gotowaniem miałem 27 l brzeczki 14.5 P. Dolalem jeszcze 2 l ostatnich wyslodzin bo miały niecałe 6 P. Wychodzi więc rewelacyjna wydajność.!
Dodałem 2 tabletki cynkowe i 2 łyżeczki płatków drozdzowych.
Czas chłodzenia do 80C to faktycznie było 5 min, potem na whirlpoolu od 80C do 75C schlodzilo się w jakieś 5-7 min.
Otrzymałem niespełna 20 l (wg podziałki fermentora) brzeczki o 17.7 P po korekcie.

18:00 Dodalem 3.5 litra wody przefiltrowanej średnio twardej, napowietrzylem blenderem i zadałem drożdże Tormodgarden.

6:00 Fermentacją hula na całego.
Oznaki fermentacji trwały kilka dni. Ekstrakt mierzony po 5-6 dniach wyniósł 3.6-4.0

Przelalem na cicha do balona ok. 22 l piwa o ekstrakcie końcówym 3.6 P. Dodałem 50 g cukru rozpuszczonego w250 ml wody. Zebrałem 750 ml b zbitej gestwy. Próbka ma bardzo fajny chmielowy smak, owocowy, średnia i krótka goryczke. Aromat nikły, raczej zbożowy.

Dodałem wieczorem cały chmiel na zimno w temp pokojowej.

Przeniosłem do chłodnej piwnicy wieczorem

cc w pudle stosując 3 butle z lodem. Temp spadła nawet do 4-5C.
