Notes: Mash In: Heat 3.5 gallons (13 liters) of water to 104°F (40°C). Add all the crushed malts and stir thoroughly to avoid clumps. Allow the temperature to rise to 122°F (50°C) for protein rest. Hold this temperature for 20 minutes.
First Decoction: Take a thick portion of the mash (about one-third) and transfer it to another pot. Heat it up to 158°F (70°C) and hold for 10 minutes. Then, raise the temperature to 168°F (76°C) for mash-out. Return the decoction back to the main mash, raising the temperature to 154°F (68°C) for saccharification rest.
Second Decoction: Take another thick portion of the mash (about one-third) and transfer it to the other pot. Heat it up to 168°F (76°C) for mash-out. Return the decoction back to the main mash, raising the temperature to 162°F (72°C) for the second saccharification rest.
Third Decoction (optional): Repeat the process for a third decoction, if desired, to achieve a rich malt profile.
Lautering: After completing the decoction steps, begin the lautering process. Sparge with 170°F (77°C) water to extract the sugars fully. |

Notes: -strike calc from BF for 154 trying to hit 149, dough in temp 149.2!
- little over hour mash, 146 finish
--ph 5.28 10 minutes in, when all in kettle before hot break = 5.42
-8.4 or so in kettle which is actuelly something like 8 when temp correction factor taken in
- 45 boil as planned
-final volume 6.5 or so, 6.2 in fermentor
-1.058 gravity
-almost 2 minutes O2, pitched mayed 1/3 packet Lutra at 92.7, set fermentor to 91
-ph in whirlpool 4.37, add just a tiny bit of boiled baking soda end of whirlpool, boiled 1.8g and maybe only added .5g, knockout pH 5.42
--looks light brown color, much darker than expected, might look like old school pale
-pretty much all estimates were right!
-up and running same night
-done in about a 1 1/2 day, hydrometer read 1.012, ph 4.27
dry hop day 3, cooled to 57 first
-day 4 crashed to 38 and transfered to 3g ascorbic, 25mg campden and 1 1/8 teaspoon biofine
-unfortunately it's cloudy after several days, taste a little sharp from hops etc, very dry finish, it should taste a lot smoother and good be pretty good in a few weeks, ph 4.37 |

Notes: Si se quiere utilizar levadura seca en lugar de liquida, una buena levadura a utilizar seria la Saphale S-04. Se añadirían 2 sobres de 11,5 gramos. En total unos 23 gramos de levadura seca.
En el caso de la levadura liquida White Labs Irish Ale Yeast WLP004, se necesitan 1 vial de 100B de células haciendo un Starter o 2 viales de 100B de Celulas.
La malta Roasted Barley se puede añadir con todo el macerado también. Pero para este estilo la mejor opción es macerar en frio la malta Roasted Barley y añadir la infusión resultante en "late adition" (adición tardía) incorporándola en los 15 últimos minutos del hervido. El agua de partida utilizada es el Agua embotellada Agua de Bronchales (Se puede encontrar en Mercadona) .
Todas las sales se añaden a toda el agua que vayamos a utilizar.
No se por que el la receta aparece como solo a "Mash" Tengamos esto en cuenta. Luego el acido fosfórico tal como pone en la receta, se añade al Mash y al agua de aspersión en las cantidades indicadas (Calculos hechos con esta receta y con el agua de Bronchales)
