brew day.
last night i spilled a bit (maybe 1/2 pound?) of wheat on the floor, replaced it with half pound of 2 row. im going to leave the recipe as it was originally because i dont know exactly how much wheat was spilled. probably minor detail.
also axed the phosphoric acid in lieu of acid malt
updating recipe yeast - used to be witbier but i decided to go manchester this time. witbier phenols maybe dont go with raspberry and i was using manchester for blueberry earlier this week anyway.

I just realized I accidentally added 1 more lb wheat that I was supposed to use for another beer. Adjusted the recipe to include it and adjusted efficiency.

last time i did 1056 which was pretty clean. i think this time ill try something more traditional, there is a wy1010 american wheat? or maybe use one of the german ones....? recipe from wedding beer was wy3333 german wheat.
removing the coriander and orange peel.
also adding 2.5 lbs raspberry. will get frozen, thaw, blend, and add after fermentation is going.

Chill to 18C.
Oxygenate slowly through 0.05 micron diffusion for 90seconds(we’re after 9-10 ppm O2).
Ramp primary from 18C to 24C through 7days.
At 1.013rack off primary yeast to secondary and coolto13C.
Hold for 5days+until the FG of 1.012 is reached.
Dump yeast a second time, lower temp to 4C and hold for 6weeks. Bottle using heavy Belgian bottles or Champagne bottles.
Prime with 31g/gal SimplicityCandi Syrup and re-pitch 350mlWestmallestir-plate.
Bottle re-ferment for 14 days at 74F.Cellar for 12months. |

Notes: This is the 3rd version of this pale ale. I'm decreasing the overall # of grain to take the projected ABV to approx 6% at estimated brewhouse efficiency of 80% (?). However, I've increased the % of caramel pils for a higher final gravity, something north of 1.01, and a sweeter finishing beer. I was happy with the corn flake and the acidulated sour taste.
I added poblano to 5 gals of the last batch and it was good. Might could increase the amount of roasted pepper to increase the poblano flavor. I'm also considering adding lime zest or extract to make a cerveza. Still researching which would be best.
The poblano experiment went really well. I roasted 5 seeded whole poblanos and soaked them in vodka for about two weeks while the beer was in primary. I added them in a hop sock directly to the keg and it sank and was recovered when the keg kicked. The sunken peppers didn't overpower the beer as I had feared would happen. |
