| Notes: Prancing pony black ale style - all grain using Robobrew first time. Strike temp 71°C, mashed for 60mins. Checked with 2 x thermometers, grain removed, boiled for 60 mins - took 30mins to get to 100°C before boiling started. Hops as per schedule above. SG1052, yeast pitched at 23°C. SG1030 day 14, stalled yeast - bumped temp up to 23°C for 5 days, no activity. Pitched 1x Nottingham ale yeast day 19- no activity after 24 hours still! |

Notes: This is an experimental version of a Pilsner recipe. This beer is RAW! Honey is dissolved in water. Grains are mashed in at 148 for 1 hour. Hops are boiled in a separate pot and then mixed into the mash. Liquor is transferred into the fermenter skipping the boil.
Efficiency was off the chart. Refractometer read 1.053, but Tilt gave 1.064 OG. After 1 week fermenting at 60 F, and 1 week at 55, beer is now lagering at 45 with FG 0.983 according to Tilt.
I will probably dilute the beer with 10 gallons of water carbonated in kegs in order to bring down the ABV to target. |

| Notes: Using Pacifica Hop Extract as the bittering at 80 mins. I have 2 siringes, each having 3.3 aau's. So a 6.6 aau together. 2 aau's higher than the recipe calls for at the T-90 minute. The ibu total bill is out because there is no hop extract calculator. Totalhop bill will be around 49 -50 ibu, well at least that is what the recipe calls for!! |

| Notes: Fermented for 2 days at 20deg.C at 15psi in fermentasaurus, then slowly let it rise (1-2 degrees per day) until it hits 28. Once yeast dropped out reduce temp. to 7deg. C., and let it sit on the yeast cake for 1 month. Pressure transferred to 19L ball lock keg. Carbonated to 2.5 volumes and stored at 3deg C for 1 week. Final Gravity 1.014 after 16 days, 6.84% ABV. Distinct banana-like flavor similar to Wyeast 3068. |
