| Notes: A light and easy drinking pale ale inspired by the small Arkansas village where I was reared. A settlement of German, Swiss, and Polish coal mining immigrants Altus had a population of 418 back in the '80s. Being on the edge of a wet county, next to a dry county and home to 4 wineries and multiple other places to purchase alcoholic beverages. We loved our wine in Altus, but when taking a break from the grape, we chugged a light beer. Seeing hops by the same name of the place, I couldn’t resist trying them! |

Cocoa powder recipe (enough for 4 gallons *make two batches*):
3 cups dry milk powder
1 cup sugar
1 cup unsweetened cocoa powder
4 teaspoons corn starch
Toasted two bags of marshmellows. Add to boil at 30 minutes. |

| Notes: Used Brew Bag. O.G was 1.070. The hops absorbed a lot more wort than expected as I finished with 5 gal. Kept 1 gal of wort aside before boil. I added it back after removing hops and reboiled to get 6 gal. |

Fermentação:
Fermentar à 20,0°C aproximadamente .... “Naquele cantinho mais fresco da casa”
Atenuar o extrato até +/- 3,1 a 3,5°P ou OG 1.012 a 1.014 (ou até que se perceba que não há mais fermentação)
Chegando ao final de fermentação adicionar o lúpulos do Dry-hopping (Cascade: 30gr, Columbus: 5gr, Chinook: 5gr)
Após dois dias colocar o balde na geladeira para maturar por 21 dias
Fermentado e maturado é só envasar normalmente colocando o prime que é de costume |

Notes: American Amber (Red) Ale with a sharp bite of citrusy hops.
American 2-row pale ale malt, American Crystal 60L and Victory malt rounds out the grain bill. Mash temperatures in the range of 152°F to 156°F creating a wort with a nice balance of fermentable and non-fermentable sugars.
Citra hops adds a unique tropical fruit flavoring; a whirlpool of Cascade hops adds grapefruit flavor and aroma.
Saint Simon the Zealot is yet another American Amber Ale in the Twelve Apostles beer line. Research with water profile, temperature variations, grain bill, hops varieties and yeast strains provide endless opportunity to evolve, improve and develop this beer over the year.
