Notes: This is a New England Style IPA from BYO article.
https://byo.com/article/neipa-style-profile/
I followed the concepts described by Neil Fisher of Weldwerks brewing.
https://beerandbrewing.com/unlock-the-secrets-of-new-england-style-ipas/
Specifically;
1) High choloride to sulfate ratio 3:1 for water.
2) Specialty yeast decended from London Ale III with high fruit forward profile and low-med attenuation and low flocculation. Burlington Ale or Vermont Ale yeast.
3)Adding hops in flameout and fermentation in addition to dry hopping.
Here is their "Juicy Bits" recipe as well.

Notes: won cambridge homebrew club competition 7.04.19 from a total of 20+ beers.
raspberries put in between 5 and 7 days from pitching yeast, dependant on progress.
this needs at least 2 months before drunk as needs time to mature.

Ferment at 65F, and if you like you can raise that to 68F after 5-6 days to allow for a bit of a diacetyl rest. |

Notes: HomebrewJoe Notes: Batch#2 I didnt record any information on batch #1 but I did use vanilla beans and have the extract amount this recipe calls for. I cant remember if I used Willamette or Saaz before. This time around I am using Saaz and Amarillo hops. I am lowering the amount of Amarillo hops from 1 oz to keep the hop profile matching a cream ale. <20 IBUs. Batch #2 will not use Vanilla beans this time as they were not available sadly. Also Kolsche yeast was not available this time as well. I am utilizing California Ale yeast. Should be easier to ferment. |
