Notes: This is my first attempt at brewing a sour mash beer. I mashed in with 4 gallons of 173F water to 5 pounds of grain. Resting temp started at 151F, and I left it sit for 48 hours. I then boiled 4 gallons of strike water. The mash temp got to 134F, so I drained out about 2.5 gallons into a pot and brought to boil. I returned the wort to the mash, which brought the temp to 150F. The rest of the brew day went as normal. |

I followed the concepts described by Neil Fisher of Weldwerks brewing.

Specifically;
1) High choloride to sulfate ratio 3:1 for water.
2) Specialty yeast decended from London Ale III with high fruit forward profile and low-med attenuation and low flocculation. Burlington Ale or Vermont Ale yeast.
3)Adding hops in flameout and fermentation in addition to dry hopping.

Notes: On or near the day you brew, split the vanilla beans and scrape the caviar into a glass or other container. Chop the bean husks into small chunks, roughly one inch long, and place them into the same container as the caviar. Pour in 1 to 2 ounces of a quality bourbon, enough to cover the vanilla pieces. Seal the container and let sit until ready for secondary fermentation. Once into secondary fermentation, pour the whole contents into the fermenter/secondary vessel.
Vanilla really needs a vehicle to get the flavor out. You could toss it in the beer, and it'll extract the flavor, but slower. Alcohol, and cream even are some of the best vehicles for getting the vanilla out of the beans.
