Notes: Tripla decocção:
1- Infusão inicia 52°C e após 20 minutos passa 1/3 da mostura para panela de decocção. Elevar a temperatura para 63°C por 5min. + 5min 72°C Depois ferver por 20 minutos. Devolve tudo pra mostura principal, para atingir a rampa de 63°C. Manter por 20min. a 63ºC
2 -Depois uma nova transferência de 1/3 do mosto para decocção a 72°C por 5min. Ferver por 20 minutos novamente e depois retornará à panela
3- Após 20 minutos em alfa-amilase, 72ºC iremos separa mais 1/3 , onde novamente permanecerá por 20 minutos fervendo. Finalizaremos o processo devolvendo o conteúdo à tina inicial para chegarmos ao mash-out e continuarmos o processo normalmente.
WUTZ opção com 2 decocções:
retirar sempre partes mais densas, com bastante grãos
Aquecer a água 58ºC
Arriar o malte, deve baixar por volta de 52º manter por 10min
Retirar uns 28 litros para primeira decocção.
Elevar a 62ºC por 15min.
Ferver por 20min. Devolver para panela principal.
Deverá atingir a temperatura de 60º. Elevar até 63ºC
Manter todo o grist por 20 a 30min nesta temperatura.
Retirar novamente uns 25 a 30 litros para segunda decocção. Ferver por 20min. Devolver a panela principal.
Deve atingir por volta de 70ºC subir para 72ºC por 20min.
Depois Mashout a 77ºC 15min
Recircular até ficar cristalino e ferver pelo menos 80min
Aqui já entram 50gr de lúpulo

Notes: * Ensure that wheat is milled properly, sightly finer than the setting for barley.
* Probably should move to a 2 gal strike and 2 gal sparge on a 3-gal batch.
* Performed about 20 slow vorlauf re-circulations with a quart-sized pitcher (~15 minutes)
* [!!! IMPORTANT !!!] Cut off the mash drain/sparge when total wort volume is around 2.5 gals and/or the brix is reading ~3. The most recent batch (while delicious) was lighter in color and mouthfeel than previously.
* Prone to cloudiness. Use Irish moss.
* Added 1 cup of cold brewed coffee to ~3 gal before kegging. This ratio should be increased. |

Directions:
Use carbon-filtered Savannah municipal water from Floridan aquifer. Mash at 152°F (67°C) for approximately 60 min. (I sparged too cold, at 125°F (52°C) and did not get good extraction. Suggest warmer sparge.) Ferment at 65°F (18°C). Grind cocoa nibs in coffee grinder and sterilize with ethanol prior to addition. Soak vanilla beans overnight in ethanol to enhance flavor extraction. If is not sweet enough after secondary, add another 8 oz. (227 g) lactose. (Note that ethanol can be any spirit of your choice.) |
