Notes: This is my first beer after finalizing the Craft Brewing Certificate program at Cornell University. It's a simple recipe that follows the exact guideline for an Amercian Amber Ale as published by the Brewer's Association. The beer is all grain, and the mash is a single infusion, isothermal mash. Only one New World hops (Centennial although Cascades or other US hops could substitute) is used. The only caveat I have is make sure you know your water chemistry and adjust accordingly.
This would be a great recipe for someone who is starting all grain brewing. |

Step by Step
Crush the roasted barley very fine. Run it through a coffee mill or use a rolling pin to turn it almost to dust. That is critical to getting the right flavor and color with this recipe. Mill the remaining grains as normal and dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 120 °F (49 °C). Hold the mash at 120 °F (49 °C) for 15 minutes then raise the temperature to 148 °F (64 °C) until enzymatic conversion is complete. Raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (24.4 L) and the gravity is 1.032 (8 °P).
The total wort boil time is 90 minutes. Add the bittering hops with 60 minutes remaining in the boil. Add Irish moss or other kettle finings and the last hop addition with 15 minutes left in the boil. Chill the wort rapidly to 69 °F (21 °C), let the break material settle, rack to the fermenter, pitch the yeast and aerate thoroughly.
Ferment at 69 °F (21 °C). Slowly raise the temperature during the final 1⁄3 of fermentation by 6 °F (3 °C) to reduce diacetyl levels in the beer. When finished, carbonate the beer to approximately 1 to 1.5 volumes and serve at 52 to 55 °F (11 to 13 °C). |

Notes: After mashing, bring to boil. Chill to 40 deg C.
Lactol to pH=4,5.
Pitch 3 dl Biola
Flush CO2 in headspace and cover the wort with gladpack.
Let it sit until ph=3,5.
Boil 60 min and add 0min hops.
Chill to 20 deg C and pitch yeast.
After 4 days, add hops
Last dry hop: 2 days in fermentor in normal temp, and 2 days during CC - 4 days in total.
Brewday was ok. The store only had Biola with blueberry taste, wich was my first mistake. The taste and aroma never never went away, so for next time use clean Lactobacillus. Second mistake was that I boiled it to soon. Stoped at pH=3,7. This was because I had to leave for work.
Had two rounds of dry hopping, first one in a filter for 4 days and second directly in the vessel.
Temperature under fermentation was a little bit low, 16-17 degC.
CC for two days and kegged it (Closed System)

Notes: My second attempt at a cloudy, juicy, ridiculously over-hopped NEIPA.
5 liter yeast starter: two smack-packs of Wyeast 1318, for 48 hours, then cold crashed for 12 hours. Decanted and pitched.
Also this is my first use of my Blichmann HopRocket, with 3 ounces of whole leaf Mosaic, after the hopstand and directly from the boil kettle, through a counter flow chiller to the fermentor.
I think this brew has finally pushed the limits of hop additions! |

Notes: Really poor efficiency, probably because wheat malt didn't get broken up enough. Resulted in very hoppy pale ale. Won't use Centennial as a dry hop in such a light malt beer again - likely go with something with a brighter citrus character.
Turned out to be a pretty good beer, but will not brew again without a dry hop change. |
