Notes: Mashing Instructions:
Dough in at 120 degrees with 1.3 Qts / pound. Pull 40% of the grist, bring to 150 degrees and rest 20 minutes. Bring the decoction to a boil and boil for 25 minutes. Add back to main mash in hermes system. New temperature 149 degrees. Raise temperature of mash to 160 degrees over 1 hour period. Sparge until gravity of extract falls to 1.020.
Special Instructions / Notes:
Ferment in high 30's and low 40's for six weeks. Raise fermentation temperature to 50 for additional 3 weeks. Transfer to secondary and let beer lager in high 30's for two more months. Force Carbonate. |

Notes: Using a packet of Safale-05 and a packet Danstar Windsor yeast.
Aerated for 35 minute with air pump and 5 micron stone. Pitched both yeast starters into wort. After 4 days the fermentation stopped so did a starter with Mangrove Jack Belgian Ale yeast (1/2 packet) in 1.3 liter starter and pitched into the beer to help finish. At this point I also added the 1.3 pounds of maple syrup. After 4 more days of fermentation the beer finished at 1.022. The final ABV is 12.7%. |

The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash.
For the vanilla bean vodka solution, two vanilla beans are cut in half. The seeds and goodies are then scraped into 4oz of vodka. Let the vodka sit for two weeks. |
