Notes: 2/15/16 Whirl Pooled and cooled to 65 degrees within 20 minutes. Orange peel and hops at 5 and 0 minutes were put in hop bags.
I had HORRIBLE efficiency. Had a 52%, which if you punch it in would make a 5.2 abv beverage. I forgot to give the mash a stir at the it's 60 minute mark and I let the water level drop below the grain line once or twice.:S Should be good either way, but I was interested in more malt character.
I was expecting a 75% efficiency. If that would of happened, IBUs would have lowered about 10 pts. and the OG would have hit up near 1.060.
I'll let you know what happens; for now I'll RAHAHB. cheers!
Tasting Notes:
4/12/16
Nose-bubblegum, sweet yeast character
Retains good a good head, and has a great mouth feel.
Color- slightly darker than expected. More pils color.
Mouth- Nice citrus provided by the hops as the light bitter creeps up after. Smooth, sweet wit beer characteristics slightly overpowered by hops. Does not quite meet BJCP category but defiantly a keeper. A friend called it a hoppy wit. I'm not quite sure what a good white ipa would taste like, considering what I have tasted, this is great.
Next time I would up the pilsner about to 60% and lowering the others to compose the 40 of the grain bill. Perhaps dry hope with Cascade or Ahtanum.
Hope this helps. CHEERS! |

Notes: This is a multi-step mash. Mill the grains, then mix with 2 gallons (7.6 L) of 154 °F (72 °C) strike water to reach a mash temperature of 144 °F (66 °C). Hold this temperature for 30 minutes. Raise the mash temperature through infusion of boiling water or recirculating system up to 158 °F (70°C). Hold this temperature for 30 minutes.
Due to the very low enzymatic power of this mash, it is recommended to perform an iodine test to confirm starch conversion before beginning to lauter. If iodine test confirms conversion, then you can raise the mash up to mash out at 172 °F (78 °C). If iodine test is negative, continue to hold at 158 °F (70 °C) until iodine test is clear. Vorlauf until your runnings are clear, then begin sparge. Sparge about 2 gallons (7.6 L) of water then top off your kettle to 6.5 gallons (24.6 L).
Boil for 90 minutes, adding hops according to the ingredient list. After the boil, whirlpool for 5 minutes, then let settle for 5 minutes. Chill the wort to about 65 °F (18 °C) and then pitch yeast and aerate wort.
Once fermentation commences, allow beer to free rise up to 70 °F (21 °C). You can hold this temperature for ten days or until the completion of primary fermentation, whichever is later. Bottle or keg the beer and carbonate to approximately 2.3 volumes.

Default All-Grain - Guinness Draught Clone
Recipe Type: All Grain
Yeast: Nottingham
Batch Size (Gallons): 5.5
Original Gravity: 1.053
Final Gravity: 1.013
IBU: 43
Boiling Time (Minutes): 90
Color: 24.7
Primary Fermentation (# of Days & Temp): 10 Days at 65
Additional Fermentation: no
Secondary Fermentation (# of Days & Temp): 10 Days at 65
Tasting Notes: I have been working at making a clone, This is pretty much spot on.
Guiness Draught Clone 68% Eff.
8.00 lb Pale Malt, Maris Otter (3.0 SRM) Grain 66.67 %
3.00 lb Barley, Flaked (1.7 SRM) Grain 25.00 %
1.00 lb Roasted Barley (300.0 SRM) Grain 8.33 %
2.00 oz Goldings, East Kent [6.20 %] (60 min) Hops 43.0 IBU
2 Pkgs Nottingham Yeast (Lallemand #-) Yeast-Ale
Mash: 3.75 Gal 170.5 Degrees for 45 Min
2.50 Gal 185.0 Degrees for 20 Min Batch Sparge Round 1
2.50 Gal 185.0 Degrees for 20 Min Batch Sparge Round 2
Cool to 65 Pitch Nottingham let ferment 10 days at 65, Rack to Secondary for 14 days at 65.
Brewers note: To get the sourness of guiness. 1 Week before brewing put 24oz of Guiness in a bowl and sit it on the counter for 4 days to get sour. Freeze until brew day, On brew day remove and thaw. When there is about 30 mins left in your brew put the sour guiness on the stove and boil it for 10 mins then add it to flameout on your brew.
Brewers note two: Remember when brewing this beer that you will not get the creaminess of Guiness unless you have Nitrogen Injection. However the Taste is spot on. Enjoy
