Hopped beyond the point at which IBUs are measurable, only the most hardened palate will get beyond Jack Hammer's intensely resinous pithy bitterness and to the grapefruit, orange zest and dry biscuity malt beyond. You could brew this with less hops, but really, why would you bother? Be aware that this is probably the hoppiest beer you will ever make. Make sure you use fresh hops, for a massive fresh grapefruit hit. Have everything else in your store cupboard, and buy your hops last, as close to brew day as possible!

Notes: Robin Hood Golden Ale is based loosely on Graham Wheeler’s recipe for Hop Back Summer Lightning, which the 2015 BJCP style guide credits with popularizing the style of British Golden Ale. Wheeler’s recipe is single malt (Pale ale malt), bittered with Challenger, and finished with late and post-boil Kent Goldings. Robin Hood is a SMaSH recipe with Thomas Fawcett Maris Otter as the malt and hopped exclusively with the new British hop variety, UK Archer. Golden Ales were originally created for summer and were meant to be more refreshing in warm weather than regular English bitters. As a result, they do not employ crystal malts and should be served colder than cellar temperature (54 F). |

Notes: Made some tweaks recently to my batch #1.
Compared to 2016 Heady Topper mine was coming out slightly too dark by 1 or 2 SRM and was also slightly too candy-ish, which I attribute to both the Caramalt and the Amarillo hops %s. I reduced both in this batch. Actually subbed Comet for Amarillo. I also swapped Turbinado (Sugar in the Raw) with plain old corn sugar (Dextrose) to eliminate even more darkness/residual sweetness. Finally I upped the Columbus and lowered the Simcoe.
For the Malt Bill use the following brands:
Thomas Fawcett Pearl Malt
Thomas Fawcett CaraMalt
Canada Malting White Wheat Malt
Primary fermentation target 68*ambient. Allow to rise to the low 70s as primary fermentation nears completion.
"Conan" yeast is essential for this recipe to turn out correctly. I use the Yeast Bay's "Vermont Ale." There are a few other brands that are based on the Conan strain. Harvesting Conan from cans of Heady Topper would be best. If you can't get Conan, you could try English strains Wyeast 1968, White Labs 007, or Safale US-04, but they may not attenuate low enough and could result in too much sweetness.
For the bittering hop addition use 10 ml of HopShot at 90 minutes (boil). This should add 117 IBUs.
Allow wort to cool to around 180 degrees and add whirlpool hop addition.
Split the Dry Hop into 2 additions over 8 days (4 days each.
Note: Shooting for 130 IBUs total, mostly from the hopshot. The very late additions should not have noticeable utilization (maybe 10%).

After boil do a whirlpool and cool to 185 and then steep hops for 20 mins. Chill wort to 54 and aerate and then pitch yeast.
Ferment at 59 for 2 days, and then add first dry hops. When SG is 1034, allow temp to rise to 64 for diacetyl rest. After 4 days at terminal gravity add remaining dry hops (everything marked 3 days). After 3 more days crash and carb to 2.65 vol. |
