Notes: Add lemon and orange zest and juice to end of boil.
Pitch yeast at 65 F, add brett vial directly (no starter), slowly ramp up to 85 F after 72 hours.
Primary for 2 weeks at 85 F. Rack to secondary for 8 to 16 weeks. Add 0.5 oz French oak cubes after two weeks of secondary.

Notes: Bring Wort to quick boil then cool to 90F and pre acidify with lactic acid to 4.2-4.5 pH. Pitch OYL-605 and sour in kettle to 3.2-3.5 pH. Bring wort to boil for 60 minutes and add hops per recipe. Cool to 70F and pitch OYL-500 and ferment to near terminal. Add Blackberry and Raspberry Puree and ferment for additional week. Cold crash, keg and serve.

A triple whammy of coffee from HasBean gives our 17th Abstrakt concept beer an intense and roasty, dark mocha character. We brewed with espresso in the mash, cafetiere in the boil, and whole roast beans in the whirlpool and the fermenter. Use freshly ground coffee for the best aromatic hit.

Notes: 10 gallons of beer were brewed in two 5 gallon fermentations with 12 oz of coffee each.
Coffee is coarse ground and French roast from Vienna Coffee in Maryville, TN and cold brewed for 24 hrs and filtered.
The coffee is expected to raise IBUs about 8 to 10 units and darken beer slightly. The French roast is dark, thus providing extra oils that will make beer creamier in mouthfeel but also reduce head. |
