Notes: Post Brewing/tasting notes:
Tastes very good, It's malty, sweet and citrusy. I would not change anything on the grain bill (maybe some sugar to dry it out), or yeast (but any clean yeast would work as well lager or ale). The Voss adds more of an Orange flavor than Lemon, but it really goes well with the rest of the beer. Would be willing to try out some other hops. I want to add more lemon flavor somehow... Maybe a tincture? Lets say 1-3 lemons zest in 1/2 quart of vodka for at least 24hrs shaken every so often? and add to bottling bucket until I'm pleased with the flavor/aroma.
Pre-brewing notes:
Going for a very crisp finish, and lemon flavor in this cream ale from the hops, the yeast, and the zest of one large lemon during the hop stand. Plan to under pitch the Voss and keep the fermenter at ~85F to push the lemon/citrus flavors it can produce. Also going for a very low PH in the final product.
Will add sugar at end of boil to get to ~1.052 OG if needed. |

Notes: After Sparge….raise temp and boil wort for 10 min...turn off burner chill to 95F and add the Lactic Acid to a ph of 4.5...Add the Mango Goodbelly drink, purge with C02, cover with cellophane and wrap in a blanket...maintain at 95F for 24 hrs.....then test for PH...target is 3.3 - 3.5, boil recommended time then chill to 65F

Notes: I call this one Weihnachtsbier which is Christmas Beer in German. You will be delighted with the results of this recipe. resist temptations to throw in more honey in than the recipe says. Too much honey will make the beer too dry and more alcohol forward than it needs to be. I looked up how to make cinnamon or ginger tea, which is what we are doing in the wort, and it seems that putting them in at 15 minutes left in the boil and leaving them in for 15 minutes after flame out makes the best sense. The video I made on YouTube says 60 minutes but I've changed it since I made that video. Great Holiday beer. Cheers ! |

Notes: Really good taste, superclear without cold crash or gelatin and this after just 3 week's of carbonation. Foam is perfect. Wold not change anything other then maby try other hops next time, but Smaragd hop is pretty great, never tested it before.
Ferment 10-14 days at 16-17C and then one week at 20-22C.
Store it in a cold basement (or in a fridge at 2-4C) for 6-8 weeks. |

A bold version of an Old World beer style, influenced by "wild" hops from the new found land.
Ingredients
4.5 kg British pale ale malt (3 °L)
85 g crystal malt (90 °L)
198 g roasted barley (300 °L)
8 AAU Columbus hops (60 mins) (19 g of 12% alpha acids)
White Labs WLP001 (California Ale) or Fermentis US-05 dried yeast (1 L starter for liquid yeasts)
Step by Step
Mash at 67 °C. Boil for 90 minutes, adding hops with 1 hour left in boil. Chill the wort rapidly to 19 °C, let the break material settle, rack to the fermenter and aerate thoroughly. Pitch the yeast. Ferment at 19 °C. |
