Notes: - based on "Westbound Quad" recipe on the HBA website/zymurgy magazine. That called for 1.1kg dark candi sugar @ 180L. I'll use 180 if I can find it, otherwise I'll mix/match dark and light to try and hit about 20 SRM.

Notes: Use 24 oz mesquite chili honey (Lone Star Bee Co. Fiery Sweet Mesquite honey) and 3 lbs TX wildflower honey. No boil, just warm water to mix in honey and yeast nutrient. Use staggered nutrient additions or whatever nutrient regimen works for your meads.
If not enough chili flavor, either up the ratio of the two honeys (either 1:1 or 2:1 instead of 1:2), or could try steeping some mesquite-smoked jalapeño and/or habanero chilies in the mead. Or keep one gallon as is, add chilies to second gallon, then blend to taste... |

Notes: - Add brown sugar with 10 minutes left in the boil
- After 1 week fermentation: puree 4lbs overripe bananas (+6pts to gravity) with enough water to make a pourable paste. Bring mixture to 175F and let stand for 30 minutes. Add to secondary and siphon beer on top, allowing two more weeks' fermentation for the bananas.
Total OG (+ bananas) = 1.072
