Notes: Can use any noble hops and might have to switch out the Munich for Victory or Special roast as Munich might not be available at the local shop. I added more bark Munich from 6.2 to adjust the final gravity and add color as this app had the color a little low and the caramel malt from 10oz. Need to check these, before the brew. Also the IBU should be about 28 |

Notes: On or near the day you brew, split the vanilla beans and scrape the caviar into a glass or other container. Chop the bean husks into small chunks, roughly one inch long, and place them into the same container as the caviar. Pour in 1 to 2 ounces of a quality bourbon, enough to cover the vanilla pieces. Seal the container and let sit until ready for secondary fermentation. Once into secondary fermentation, pour the whole contents into the fermenter/secondary vessel.
Vanilla really needs a vehicle to get the flavor out. You could toss it in the beer, and it'll extract the flavor, but slower. Alcohol, and cream even are some of the best vehicles for getting the vanilla out of the beans.

Notes: 90 minute hops are FWH.
Traditional fermentation: Start fermentation at 6℃ and allow to increase to a max of 10℃. Maintain for 5 - 8 days. Once 80% of desired attentuation is achieved start reducing temp by 0.5℃ per day until temp is 4℃. Transfer to keg with spunding valve and place in keezer for at least one month to finish. Hold until fermentation is finished. Transfer to serving keg.
Alternative fermentation: Start fermentation at 6c and allow to rise to a max of 10c. Hold at 10c until close to FG (6-8 days) and then increase to 16-20c for accelerated maturation. Hold until FG is achieved and no diacetyl is present (2-3 days) and then crash to -1c. Transfer to keg and hold at -1 for 1 week. Transfer to serving keg. |
