Notes: Yeast starter made with 1/2 cup of dark spray DME boiled in 2 pints of filter tap water.
Would have to question the calculation above, as I measured OG=1.070 and FG = 1.012 giving me an abv = 7.7%
Also giving these calculations my yeast apparrent attenuation equates to 82.8% and according to Whitelabs they measure 70-76%, contacted white labs and they say: " The fermentability of your wort along with yeast strain, fermentation temperature, oxygenation rate, etc... all help determine the attenuation of your beer. The ranges given for each strain are guidelines for what the average brewer will get for a "normal" brew. They are intended to help you choose a yeast strain that will give you the attenuation range you are looking for, but lots of other things need to be taken into account as well so it's not at all unusual to get attenuation outside the given range."

Notes: Mashing Instructions:
Dough malt into 120 degree water. Pull 35% of grist and decoct. Decoction should rest 15 minutes at 147 degrees and boil for 20 minutes. Add decoct to main mash and let rest for 1 hour at 150 degrees. Raise temperature to 160 and mash out.
Extra Ingredients:
Invert and concentrate sugar the week before. Stir constantly and lower heat. Sugar will become thin caramel.
Water should be very hard; similar to Dortmund or Burton-on-trent. High level of Sulfates, Carbonates, and Salts
Yeast:
Wyeast 3787 and White Labs WLP 530 (both Westmalle Strains) should be added right away
Wyeast 1388 (Duvel) and White Labs 550 (Le Chouffe) should be added on day 3
Slurry from bottle of Westvleteren 8 added three weeks into fermentation when gravity falls below 1.025.
Fermentation started at 65 degrees. Temperature raised 2 degrees a day until it reached 85 degrees. Massive starters or starter beers used in all cases. |

1.5kg TC Amber Malt Extract
STEP 1: Mix
First crush malt grains and tubes of these in a saucepan with 2 liters of hot water boiled.
2nd Remove the pan from the heat, let it all soak in for about 30 minutes, then set the pan in cold water to cool down.
3rd Dissolve Light Dry Malt in the fermenter in 2 liters of hot water.
4th Add the strained, cooled with liquid chocolate malt in the fermentation vessel and ölsatsen English Bitter and TC Amber Malt extract and mix well.
5th Make up to 25 liters of cold water, stir very vigorously and add the yeast.
STEP 2:
Try to let the fermentation take place in the 18C to 21C.
After a few days of fermentation; add Fuggles and ECG pellets.

Notes: Recipe is based on extract recipe obtained from Reddit as well as the description from Mother Earth's website. Note that for this 1 gallon batch. I used about 3/4 of a vanilla bean and found it could've used more. Vanilla bean was split, scrapped, chopped, and all tossed right into the primary (or using a hop bag if desired).
Personal Touches:
1) Real recipe uses Warrior hops - using Glacier to lighten cohumulone.
2) Mother Earth states 18 IBU, 6.0 SRM, and 5.0 ABV (1.048 OG & 1.011 FG). Slight variations to this are present in this recipe.
3) This recipe pushes for slightly more body than the 'Medium Body' advertised. This is done via higher mash temperature and SO4/Cl ratio of less than 1. |

Meshing went bad somehow, the OG became way too low, about 20 points. Could be the reason of new sparging where we pumped water (74 degrees into the wort and continuously tapped the wort out to the boil kettle.
Next time, do it different! That is let sparge water stay for a while and tap out to kettle like we have done before.
2017-05-31: Dryhopping in cornelistap under 1.0 bar pressure.

SG: 1.016 (dry hop, under pressure ~19 degrees)

Flödeslakning under dryga timmen, cirka 1 liter på 2 minuter. 30 liter totalt efter lakning,
Lactal, användes vid mäskning, drygt en kork för att få ner PH från 5.8 till ca: 5.3
Kokade ner ca 6 liter (från 30 till 24), något för lite för vårat recept vilket resulterade i ett lägre OG (skulle ha landat på 1.068). Kunde ha kokat ner mer men svårt att läsa av våran kittel hur många liter som finns i den..
Hopstand efter kok till mindre kittel och lät ligga i 30 minuter och efter det pump till kylning.
Landade på 24 liter i den nya koniska jäskärlet av plast. Tryckte in den i kylen med 17 grader som börvärde. Använde Safale S-05, Amerikansk ale istället för English.
2017-08-05: tappade om till betterbottle. Koniskt jäskärl ganska onödig att ha i kylen då den behöver vara monterad. SG på 1.016 redan efter 4 dagar. Fortsatt jäsning i 17 grader. |
