Notes: Made up a 1 pint wort, gravity ~1.035, . Boiled for 30 minutes, cool to room temperature. Pitch one vial, shake well and let sit for 1 day. One Tsp of nutrient added. Pitched at 70°F.
I thought I had cascade hops. However I had added centennial Hops.

The most important thing with this clone recipe will be the fermentation temperature control. Yuengling doesn’t have much in the way of esters or aromas derived from the fermentation, so it’s important that this beer is fermented cool and cold conditioned to keep those yeast characteristics in check. |

Notes: Soak the US Medium Plus Oak Cubes or chips in 16 oz of Coffee Liqueur for 24 – 48 hours. Use half the pack for a mild oak flavor, or the whole pack for a more pronounced oak character. Then add the oak cubes and Coffee Liqueur to the secondary fermentor and wait an additional .5 – 2 weeks before bottling.
TIMING IS FLEXABLE depending on how much Coffee Liqueur and oak taste you want. |

Notes: Ale Yeast
Wyeast and White Labs both offer an Irish ale yeast — 1084 and WLP004, repectively — and these are popular choices for dry stouts. However, many English ale strains will do a good job in a dry stout, especially if they are relatively highly attenuative. Likewise, a “neutral” American strain — including the very popular strain available as Wyeast 1056, White Labs WLP001 or Safale US-05 — is also a good choice. If the yeast has enough character on its own to distract from the roast character, then it’s not appropriate.
Keep in mind that, although dry stouts are meant to be dry, they don’t have to be bone dry. You do not need to shy away from your favorite English ale yeast if it is only moderately attenuative. Dry stouts start at fairly low original gravities (OGs), so you can reach an appropriately low final gravity, even if your yeast strain is not among the highest attenuators. |
