Notes: Love this. Came out creamy, slightly bitter and great fruit taste. I think it is good as or better than what I have tried commercially.

An avalanche of cross-continental
hop varieties give this porter
a complex spicy, resinous and
citrusy aroma, with a huge malt
bill providing a complex roasty
counterpoint. Digging deeper
into the flavour draws out cinder
toffee, bitter chocolate and hints of
woodsmoke.
Brewer's Tip: Mash in at a higher temperature to
leave more unfermentable sugars in the
wort. This gives the beer a sweeter
porter profile. |

Notes: Kettle Sour Using Lacto Plantarum - Omega OYL-605; Goodbelly Mango or Shots; Swanson Probiotics. 2L Starter, 1.040, 3 days @ 100F. Add 4# acidulated malt after 60 min mash to drop pH to 4.5, add lactic acid to adjust if needed. Collect 26 gallons wort and bring to 180F for 10-15 min, chill to 100F, pitch Lacto starter. Purge with CO2, cover let sit at RT for 18-24hrs. Freefall should be around 85-90F after 24hrs. Check pH, target 3.2-3.4pH. Boil as normal. |

Notes: WOW I usually do not like wheat beers but WOW! This is taste amazing. Very simular to blue moon but with a heavier mouth feel and hint of honey in the finish. I will brew this one again!
I cracked A bottle for a few friends while I was having a little beer tasting party at my house and watching the Portland Timbers mash FC Dallas for the 3rd time this year. The beer was not yet carbanated but had a very distinct honey flaver and honestly tasted just like blue moon. |
