** MASH **
PRE-HEAT MASH - 1 gal of Boiling Water
Water Volume: 3.35 gallons for 1.5 lb/qt ratio.
STRIKE WATER: 145F.
Add Grains @ 142F.
Allow Temperature to fall to 131F prior to closing lid.
** DECOCTION **
**Begin @ 15 Minutes**
1. Remove ~1/3 of Thick Grist from Mash and add to Boil Kettel.
2. Externally heat until reaching a temperature of 152F.
3. Maintain 152F for 15 minutes.
4. Bring to a boil and allow Decoction to Boil for 15 minutes.
5. Check Temp in Mash Cooler prior to adding back Decoction Mash.
6. Immediately add Decoction back to Mash Tan.
7. Finish mash at 152F for 30 minutes.
** SPARGE **
1. Pre-heat 7gal of Water to 180F. Add to Sparge Vesssel.
2. Allow water to cool to 175F prior to beginning Sparge.
3. Recirculate 3 times prior to collecting wort.
4. Attempt to sparge over 30-40 minutes.
** BOIL **
1. Check Pre-Boil Gravity (goal: 1.043)
2. Boil for 90 minutes [goal OG: 1.050]
3. Scoop the Poo for ~10 minutes.
4. Add Hops @ 10 minutes.
5. Continuously check Gravity q10min near end of Boil to ensure hitting OG prior to ending Boil !
6. Chill wort to 60F prior to Fermentation.
** FERMENTATION **
Goal Temp: 62F

Rye Malt 5/10%
New American varietals like Citra, Mosaic, El Dorado, and Idaho 7 provide complex fruitiness and layers of tropical flavor. Classic American hops like Columbus and Centennial can also be used to add some earthiness, dankness, and balance.
Australian hops like Galaxy, Ella, and Vic Secret are used for their juice-like qualities and tropical fruitiness. New Zealand hops, like Nelson Sauvin, Motueka, and Riwaka, are unique and fruity – with more grape, melon, and floral attributes. These Southern Hemisphere hops can be expensive and hard to get your hands on due to overwhelming demand. Don’t hesitate to buy if they’re available – you won’t regret it
If you choose to double dry hop, add about one quarter to one third of the total dry top during fermentation. Add the remaining hops after fermentation has completed.

Notes: I know anyone reading this recipe has already found many Maple Nut Brown Recipes that have not worked. I offer two solutions to get the maple flavor in your beer. I brew the nut brown ale, ferment it, then keg it. I let it sit in the kegerator for a day or so then add the maple syrup. This gets the maple flavor but it will drop off as the beer sits because even cold ale yeast still ferments available sugars. The other method I have not tried because I really do not want to add chemicals to my beer is by adding Camden Tables (sodium bisulfite) to control the yeast.
Good luck. If the maple syrup does not leave a flavor at least you will have a good nut brown ale with a little extra alcohol. |
