OG 1.050 slightly higher than anticipated at 72% and higher volume at 5.5 gallon.

FG on point. Made 2 french presses of tea using 5 oz of whole leaf nice Earl Grey tea. The tea was added to the keg along with 6 oz of maple syrup to carb. |

Notes: 2 packs of M31 used after rehydration (in 100ml water - less than suggested).
Started at 18c ferment then raise to about 24c over a week.
Temp rise was about 1c per day for the first 6 days. It was struggling to warm up after a couple of days I guess because of very cold garage. Was in my largest fridge with only a copper tun heat pad for warmth.
Added sugar as a syrup after 7.5 days in primary. Loads of estery smells from fridge at this point. |

Notes: Brewhouse efficiency was actually higher than stated as the inverted sugar (golden syrup) was added after the boil, directly to the fermenter. I can't seem to account for that in the recipe builder.
The OG was lower than I had originally planned. I was aiming for 1.067. I think my normal 80% efficiency was hit slightly by the larger than average (for me at least) grain bill . I had initially envisaged a 23L batch but pitched a 2L starter at high krausen. This again lowered the OG somewhat as it diluted the wort with much lower gravity starter. This is also why I included 200g of DME in the recipe. This is actually from the starter, not the beer.
When checking the gravity after 7 days and before dry hopping, I was down to 1.008, so much better attenuation than is suggested for this yeast. |

Notes: Slightly amber and very hoppy Mosaic Session IPA! Crowd pleaser.
Actual IBU: 70
First attempt at making a half-batch! This is more than double my typical brew and I expect to get a full 2-4 out of it! Wo-hoo! Now the only challenge is to make it work with the ingredients I have on hand - I just found this big jug today for 20 bucks and originally I expected to do this mosaic session ale with the same 26g hops for only 4.5L! I found enough hops leftover in my freezer to bring the base full-boil bitterness up to a nice IPA level without affecting the taste of mosaic in the flavour and aroma categories.
To improve hop utilization, I'll do a 60min boil with 600g light and 250g dark DME. The honey, 400g light DME and 200g dark DME will be added at 50mins. I still want to boil everything for at least 30 mins, so wait 20 mins before adding the 10 min additions (hops, irish moss). Estimated IBU increases from 41 to 70! |
