wlp 300 was unavailable and purveyor substituted wlp 380
we decided to underpitch the 380 and ferment on the warmer side in order to increase the isoamyl acetate esters per the experience below:

Bought this cause my local store was out of WLP300 strain. But as I wanted the 300's banana flavour I used one vial for 40 liters. No starter, no aeration, 25 °C...BOOOOM banana all over the place. In my mind even more than you get with WLP300. On the other hand attenuation went down but that's a price I'm willing to pay. Aroma is less fruity and more spicy. Besides banana there's also hinds of clove and citrus in the flavour (might be the Saphir hops though) plus a very nice acidity.

Notes: 60 min. boil, then chilled to 70 deg. OH SHIT!! Somethings not right. I forgot to add the whirlfloc, Back to the burner for a 2nd time. Boiling again, got another hot break, and skimmed it off. Whirlfloc in for 10 min. then chilled to 70 again. (Hence the name) 2001 Wyeast Pilsner Urquell lager yeast in a 1 ltr. starter pitched at 70 degrees,air lock bubbling good @ 3 hrs, then to 50 deg. for 21 days. Raised to 60deg. for 24hr. diacetyl rest. Then 14 days @33 degrees SG 1.060 - FG 1.016 ABV 5.7 Waiting on the finished product for taste test.
Beer was the best I have made yet. My buddy who has always been a store buying, American mega brewery beer fool, had to be run out of my fridge. He is now on the craft beer train.
Pulled another bottle or three out and partook while watching football yestiddy. This brew started great, and just keeps getting better and better. DAYUM!! I think I'm turning Germanese, I think I'm turning Germanese, I really think so. |

Notes: Here’s an easy double decoction Weizenbock that’s HEAVY on the Laidback SoCal attitude. Features a Honey and Chamomile presence with a rich color that says you just tasted some SoCal attitude. The recipe was pulled from a few ingredient designs on the web and the construct was taken directly from Stephen Snyder’s “The Brew-Master’s Bible” where he promotes and explains the purpose and how-to for Decoction Mashing.
The wheat, honey, and chamomile was the focus for flavor and aroma which turned out to be easy on the pallet, but the attitude is all about the 8.6% ABV which keeps in line with the SoCal +ABV standards. The 2 oz. of Chamomile can be inserted a few different ways according to research on the web, I chose to use a hop sack at the 60 min. boil point. Expect a long maturation, I’m now into it for 3 months and will give it another 3 months, but the tasters are keeping me anxious.
Fermentation was vigorous, I used a primary carboy cap with a 3/8 hose to a water bottle bucket. Primary Fermentation: 5-7 days @ 55°-68° F, Secondary Fermentation: 1-4 weeks @ 40°-45° F. |
