Notes: Heat up 3.5 gallons of hot water. Place into sterilized fermenter, stir in the 10 pounds of sugar and stir until dissolved, add 10
cans of welches frozen 100% pure grape juice to the hot water, stir until dissolved. Top off with Cold water. Stir well to airate then Pitch Rehydrated Lavlin K1-V1116 Wine Yeast. Allow 10-14 Days in the primary, and 7-10 days in secondary. Re-rack Secondary with one packet of knox Gelatin (dissolved in 1.5 cups of warm water. Mix well before racking back into glass secondary. Allow 5-7 days for clarification. Condition with wine conditioner/sweetener to taste. Bottle and Enjoy. Best Served Chilled. |

OH man, I'm excited about the new recipe. =D
There are no notes from the ageing process I used last time. Briefly, . . .
I used my environmental chamber at work to effectively lager the brew (ale yeast), basically, drop the temp to about 52F, and added oak probably 3 times. Each time soaking in bourbon and adding all soaking bourbon, too. I probably added bourbon in 1-2 week, periods then removed, first the cubes, then the spirals I bought. All new wood. This time, I'll use the same wood, but I've had the cubes in bulliet rye whiskey for about two months now. I think, maybe Maker's. No straight Whiskey. I saved the bottle. This time, I'll shoot from the hip and age in my closet, but the Nov. temps should be nice for ageing (ave ~ 60F). Add oak around T-Day and age as long as I can wait, or until Xmas. Bottle on Dec 11th to have ready for Xmas. ONly 2 wks ageing :\ . . . New Year Beer ? |

| Notes: I steeped grains for 30 min. I then added the 2 lbs of Pilsen Light Dry Malt and 1 Oz Mt. Hood Hops to the boil for 60 min. My understanding is that by splitting the dry malt extract into 60 min. and 15 min. is to achieve a higher attenuation of the grains. At 30 Min. I added another 1 oz of Mt. Hood Hop pellets. At 15 min. I added the other 6 lbs of dry malt extract .Once cooled to 68F, I took the OG which was 1.061. I added the yeast and fermented at 65-67F for 9 days at which point the FG was 1.012 and fermentation appeared to be complete. I bottled with priming sugar and left at room temp for another couple of weeks before chilling it at 33-43F for "lagering". It is a tasty beer. |

Magnum/Columbus bittering combo (.5/.5oz -> .75/.75)
--> total inc 13 IBU
14 -> 12 oz C60
Light DME -> Pilsen DME
5 -> 10 g Gypsum
3 -> 0 g Chalk
New version a little bitter, and hop flavor jumbled. Go back to perle (from .75 columbus to .5 perle). Back off on Gypsum (10->8g). Pump up C60 (12->14oz) |
