Notes: This is the first time I have done this recipe, I wanted to experiment with the Nelson Sauvin Hops. I wanted to start out strong with a huge bittering hop like Summit and blend myself into a milder aroma hop towards the end of the boil. I plan to dry hop with more Nelson after 2 weeks and really get the white grape aroma to the front of the nose. My OG was about 1062 so it was a bit lower than expected but having pitched two vials of California Ale, there should be a solid attenuation after a couple weeks... Cheers! |

Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh. |

Notes: Originally Northern Brewer hops but replaced with Cluster due to availability.
300g of Crystal used instead of original 400g due to higher EBC of Australian Pale.
Struck at 72, down to 66 straight away.
Mash temp fluctuated between 64 and 69 at first Partial Mash attempt. Need better control.
2 x Saf23 yeast pitched after 14 hours cool down of FV to 16 degrees in fridge on 29/02/16.
7.6L boil into 5.8L.
Two readings of 1010 on 2 consecutive days 8 days into ferment. Have agitated in FV and leaving for further week before cold crash. |

Add flaked barley and 2 row to water in muslin bag.
sparge with 2 gallons of 200 water.

Notes: TOPPED WITH HOPS DOUBLE DIPA, a Heady Topper clone I tinkered with.
This was the first beer I had ever brewed, it was not a great one but drinkable and at around 10% abv in my 16 oz flip top bottles, it was sure to give ya a buzz and a bitter beer face. I went in full gusto, high guns a blazing, lol. Over hopping, over ABV, the whole 9 yards. I bottle conditioned but because of the room temperature and the high abv, I naturally stressed my ale yeast. Some got carbonation and some didn't. If I had to do this one over and I will, there are going to be a whole lot of changes. I boiled out 2 gallons of wort in my 6 gallon boil and I should have replaced it with filtered water to make up the 5 gallon mark. This was also before I had learned to use a brewing calculator. |
