Combine 3 gallons water and the grains to the Mash Tun. Stir well, breaking up any "dough balls" that may form. Temp should be between 153 and 158 degrees. Steep for 1 hour. Collect 1-2 quarts of of the wort. Pour the collected wort slowly back over the grain once or twice. Completely drain the wort into the boil kettle. Add 1/2 the water in the HLT to the Mash Tun. Again, capture a portion of the drained wort and pour it over the grain as before then drain to the boil kettle. Repeat for the remaining water in the HLT. The boil kettle should have between 6 and 7 gallons of wort.

Attenuaatio ollut tuolloin 74% joten säädetään se siihen tässä reseptissä (WB-06:n speksattu AA on 86%). Korkeampi AA edellyttää sitten mallasmäärän skaalausta alaspäin ettei tule liian vahvaa. Starting Mash Thickness säädetään 3,0 -> 3,6 L/kg, kun huuhteluveden määrä olisi muuten liian iso mahtumaan 20 l kattilaan. Batch #6 Note 180301 Edellisessä #5 panossa Mangrove Jack’s M21:llä attenuaatio ollut 61,8% niin kustomoidaan 62% tähän reseptiin (valmistajan speksissä 72,5%). Witbier#5 resepti siis tässä pohjana ja hiivan speksatulla a:lla loppuvahvuus olisi ABV 4,84%, mutta korjatulla a:lla ABV 4,16%. Brewhouse efficiency kylläkin ollut edellisen panon reseptissä 70%, mutta olisi käytännössä ollut yli 100%. Nostan tähän reseptiin saannon 85%:iin niin ABV:ksi tulee tällöin 4,71%.
