Toned down both the lactose and roasted barley a little since my last milk stout was both roastier and chewier than I like. Bumped up the Maris Otter a bit to improve diastatic power. No fermentation temp was given so just going with standard 68. No mash temp was given so I'm going to guess 154 to get a slightly less fermentable wort. Water chemistry also not given so going with a balanced profile for the first time.
Intention is to split 5gal into two kegs -- one will be just the milk stout. The other keg will have peanut butter extract and a tincture made from toasted cacao nibs added. Still working out the exact numbers on those additions and will update this when I have them.
Couldn't get Imperial A10 Darkness, which was the yeast I was going to use, so going to try Nottingham as part of my desire to move to more dry yeasts. Going to lower ferm temp a bit to 65 since I've heard stories of problem esters at higher temps with that yeast.
Toasted cacao nibs at 275 for about 10 min and smelled amazing but when sampled they had a slightly too-roasted character so we'll see how they turn out. Tossed the 2oz I toasted + 1oz of untoasted in with all the vodka I had sitting around (around 3oz), will sample in 4 days to see if it's worth using. I suspect that the nibs were already pre-toasted to the correct level so oops. Live and learn.
Got two different peanut butter flavor essences to try and have tried each a couple of times in my chocolate-flavored coffee to figure out if they made sense. The LorAnn one is a bit chemically and not very peanut buttery -- not a fan. The Brewer's Best one is much better -- very peanut buttery and natural tasting. I'll be adding it to the keg at packaging, along with the cacao tincture (minus the nibs) if it works out.
1/31/25: First brewday, unusually smooth brewday. No real problems. Late addition OG oopsie strikes again, though...forgot to take into account the lactose. Fermenter OG: 1.066. Wort tastes beautiful, looking forward to it.
Gravity tested on 2/6, sitting at 1.020, no diacetyl. Going to give it 2 or 3 more days at 67 degrees before cold crash to see if the gravity will come down a couple more points.
Put in for cold crash on 2/14, still at 1.020.

Notes: 2025:
Přidáno 10kg plzeňáku, aby to vyšlo lehce nad 14° a ne přesně jako minule, kde jsem taky cílil výše.
Profil vody: zkusím navýšit Cl z 200 na 225 pro ještě větší krémovost (chtěl jsem dát víc, ale už tak mám dost vysoký Ca2+, tak raději jen takhle o trochu)
Zakvasím dle doporučení Lallemandu na 20°.
5kg BRU-1 na studený nahrazuju 3kg BRU-1 Lupomax.
Studené chmelení jen na 24-30h, pak hned odstřelovat.
Zahradit okolo 4° zbytkového extraktu.
Loni to vyšlo sušší, než jsem chtěl, tak zvyšuju infuzi o stupeň na 69°, mělo byto přidat na plnosti.
Jak se vařilo:
Nakonec jsem začátek nestihl a drželi mi teplotu cca 68,3°, tak uvidíme. Cca 13.8° před začátkem chmelovaru. Na konci nám vychází opakovaně 13.7°, nevím, jak je to možný, ale kontroloval jsem to dvakrát, tak bude 13°, příště asi ještě přidat slad nebo jsme to někde naředili (trochu jsme sprchovali, když jsem dával chmel na whirlpool úplně ke konci přečerpávání, kdy jsem to dal moc pozdě a udělala se taková kaše, ale to mi přijde, že jsme tam toho nemohli pustit zase tolik. Ale ono to mohlo být 20/30l čistý vody a to teoreticky mohlo naředit, dopočtem by to muselo být 50l, ale nevím, prostě je to silnější 13°)
Zahrazeno 4.1° po 5ti dnech, dofouknuto, odstřel chmelu po cca 25h, zchlazování o 3°C/den. Prokvašeno na 3.0°, po 15dnech už prakticky pitelný. Z degustáku tam byla lehká trpkost chmele, snad to v hlavní várce pak nebude.

2024:
Vodu upravit viz "OTHER INGREDIENTS" na začátku, včetně kyseliny mléčný, cílit na pH 5.3 do rmutu, případně pak trochu dodat do chmelovaru dle hodnot (zvýší se kvůli vyslazovací vodě EDIT: nezvýší, pH bylo víceméně pořád stejné i po vyslazování)
Postup:
1) načerpáme vodu (840l), zahříváme na 70°, mezitím upravíme vodu a rozpustíme soli/kys. mléčnou
2) 60min jednokroková infuze na 68°C (pH 5,25)
3) scezování (scezování u Panaczecha úplně v pohodě))
4) chmelovar 80min kvůli plzeňáku
5) chmely na whirlpool
6) zakvasit na 19° (pustit na 22°C max) (Dance prý říkali v Lallemandu, že zákvasná 20° lepší)
7) po hlavním kvašení dry hop, po nasypání hned dofouknout tank na 0.1, aby se zamezilo oxidaci
8) pít boží pivo
pH:
- při infuzi: 5,25
--při scezování: 5,23
- na začátku chmelovaru: 5,2
- po chmelovaru (před whirlpoolem): 5,25
- před zakvašením (po whirlpoolu): 5,15
- hotové pivo po měsíci: 4,05
Poznámky:
- Vyšlo přesně 14°, kalkulováno 14,7°, příště dát výtěžnost 76%
- scezování úplně v pohodě
- pH jsem kalkuloval 5.37, bylo celou dobu okolo 5.25, což je v pohodě, ale počítat s tím při výpočtech
- pokles °C po nasypání sladu o 2°C
- chmel do whirlpoolu jsem dával ke konci přečerpávání do varny a po 15/20min jsme rovnou přečerpávali do tanku, což bylo na 25min cca
- výtěžnost chmele na suchý jsem dal 0,5%, zkusit zjistit, kolik se tam toho reálně dostane
- po uvaření zákal držel, i chmel už byl dost citelný z těch 3kg na whirlpool
Zahrazeno po 4 dnech na 4,5°, zchlazování o 3,5° za den. První odstřel chmelu po cca 72h (příště klidně po 48h), cca 3,5° v tu chvíli, zároveň přetaženo do jiného tanku, takže i zbytkový usazený chmel usazený v konusu tam zůstal a mělo by to pomoci netrpkosti.
Sycení - tlak držen na 0,7.
Po 19 dnech praticky hotovo, po 21 stočíme první sudy, zbytek po cca 25 dnech
Krásně samotově kulaté, akorát lehce do skladka, super intenzivní, zákal ukázkovej, zatím drží. Nasycení na 0.7 baru vypadá, že bude akorát, přidává na té krémovosti.
Celkové vyznění bylo ale docela do sucha, což někteří kvitovali, ale maličko víc plnější bych to chtěl, zkusit ubrat čas nebo o stupeň teplotu na jednokrokové infuzi.
