Notes: Made a starter at 1.038 (1#DME 4.5L water) with the WLP 590 French Saison yeast and another with the WLP545.
first running 1.078
last 1.006 added sugar syrup topped up with 2 g treated water.
OG - 1.060
Hit our numbers pretty close. Got almost 20g. in the fermenter.
Cooled to 67 with wort chiller and 63 w/ glycol. Pitched at 4:00!
Pretty cool in the garage so I put the heater in. Still at 63 the next morning but air is warm in there. It'll rise. Rose to 68 for a day or so then I let it rise to 72 until it started dropping. Didn't let it go below 68. Checked at 7 days - 1.013 - hopefully we'll get another couple points in the next few days.
Crashed - held 38 deg for a week. At kegging, it tasted a bit sour, bit sweet, bit funky - success! Finished at 8!!! |
