Notes: An attempt at cloning https://www.wychwood.co.uk/beers/hobgoblin-ruby/. Targeting 4.5%, which is cask/draft Ruby (bottled Ruby is 5.2%)
Based on, among other things, "Hobgoblin Dark Ale clone" from "Chocolate Malt" (https://byo.com/article/chocolate-malt/).
Not sure if Hobgoblin Ruby is an Irish Red or English Brown, so pick something in the middle. The "Matches styles" section of this recipe hits both.
BU/GU for Irish Red = 0.43
Northern English Brown: 0.54
Southern English Brown: 0.43
Acceptable hops are Fuggles (preferred @ 60mins, 4.4 AAUs), Willamette, East Kent Goldings, Goldings (US), and Styrian Goldings (preferred @ late, 5.5 AAUs). |

Notes: Karantinada evdeki pale ve pilsenerler ile reçeteyi hazırlamaya çalıştım. Asıl tariflerde, taban olarak Marris Otter ve ek olarak daha koyu kristal ve daha koyu kavruk malt ile hazırlanıyordu. Yine evdeki daha açık renkli olanlarla değiştirdim. Tariflerde dextroz vardı. OG yi tutturmak için olabilir, bunun yerine yine elimde bol olan yulaf ezmesi koydum, hem biraz köpük dayanımı arttırır hem de OG ye katkıda bulunur. Son dakika yapmaya karar veridiğim için maya starterı hazırlamadım, doğrudan mayayı üstüne dökeceğim.
Weyermann'ın sitesindeki kademeli mayşeyi uyguladım.
Jet-30 için başlangıçta malt ağırlığının 3 katı ile başlıyorum.
Şerbetçi otları acılık için Eldeki Brewers Gold, ve aroma için Goldings kullandım. Asıl tariflerde, EKG, Fuggle, Willamette gibi diğer otlarla da çok tarif var. Willamette herhalde daha güncel bir yorumu olurdu. BJCP yorumunda "moderate to none hop aroma" ibaresi var.
Detaylı iski raporu olmadığı için, tuz ve asitleri yaklaşık olarak hesapladım.
Şişeleme şekeri çok az olacak. Gerçekten eski usul ingiliz bitter olmasını istiyorum.
og 1050 olunca düşürmek için çok su ekledim bu seferde 1039 da düştü :D
1044 olması gerekiyordu. |
