1. Start with the following initially in the fermenter:
- (3) gallons preservative-free apple juice (12 brix or 1.048 OG)
- (1) pack yeast (S-04)
2. After 7 days add:
- (2) teaspoons of Starbucks Pumpkin Spice Topping
3. After another full week crash for 2 days after adding to the fermenter:
- 0.3 tsp potassium metabisulfite (Campden)
- 1.5 tsp potassium sorbate
4. After crashing, add to the keg before transferring and carbonating:
- 6.0 ml 88% lactic acid
- (2) cans room temperature apple juice concentrate |

Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gal recipe you will need extra because of the fluid loss during the boil process
1lb Briess Two Row
1Ib Caramel Vienna 20L
.5lb Cara Pils
.5lb Carahell
6lbs LME
2oz Mosaic Hops
2oz Centennial Hops
1oz Magnum Hops
2 Saflager S-23 dry lager yeast
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs LME and return wort to boil
Add 1oz Magnum hops and boil for 30 minutes
Add 1oz Centennial hops and 1oz Mosaic hops boil for 10 minutes
Add 1oz Centennial and 1oz Mosaic hops at flame out and whirlpool for 2 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.058
Add 2 packs of Saflager S-23 dry lager yeast
Fermentation:
Primary – 1 week at 60 degrees
Secondary – 1 week at 50 degrees
Secondary – 1 week at 30 -35 degrees
Kegging:
Keg after 3 weeks and set CO2 to 20psi for 4-5 days, then reduce to 5-7 psi and enjoy!

* Boil water for 10 minutes to remove chlorine.
* Mince ginger
* Add to mesh brewing bag in a kettle.
* Add sugar, and citric acid
* Stir, bring to a boil
* Cover and allow to cool to pitching temp
* Remove bag
* Transfer to fermenter and allow to ferment dry
* Transfer to a keg
* Add metabisulfite and and potassium sorbate
* Backsweeten to taste (maybe16 oz dark muscavado sugar according to the zymurgy article, not sure though) dissolved in boiling water and prepared as a simple syrup)
* Carbonate to 3-4 vols and enjoy

Notes: First batch was 5.25 gal of 1.112 (18 lbs of my honey added)
- Added Nardone yeast (2 packs, 3 in future) not cooled it down to room temperature after following yeast package. Overly sluggish start, took almost 5 days. Fermentation was sluggish. Fermentation had no airlock activity after 3 weeks. Lots of shaking to degass --> next time I will use the degassing tool that I have. Very sweet when sampled during first rack, but quite delightful.
Second batch was 4.5 gal of 1.096 (11 lbs added)
- Added half of the yeast (2 packs total) directly to the fermentor and half according to package instructions. Proper start, fermentation activity slowed after 2 weeks. Lots of shaking to degas --> next time I will use the degassing tool that I have. The first rack to secondaries tasted the best it ever had.
Secondaries
5.25 gal Sacred blue (8 lbs blueberries, 1 lb of mulberries) + 1.5 vanilla beans in tertiary (1 week) then add one cinnamon stick for another week (test it often)
2.5 gal of strawberry mead (3 lbs of strawberries and a handful of mulberries for colour) + tequila chips (1 week or so, test it often)
1 gal of lavender mead (2.2g of 3 week air-dried homegrown lavender, 6 days )
1 gal of chamomile mead (1 oz of chamomile from one SFB package, 6 days)
Any "left over" mead will become straight mead in a bottle.
- ZERO mead leftover. Perfect volumes.

other advice:
- I was using Lalvin EC - 1118 yeast is I was shooting for about 18% alcohol, but for most dark berry recipes I'd recommend Lalvin 71B-1122 vice D47. D47 is perfect for traditional Meads, 71B-1122 is made to bring out dark berry flavors. Just my opinion.

Notes: Wyeast smack pack was already inflated when I received it from HopTech so I was worried. I simply cut the outside and inside and poured into the fermentor. It worked great and was fermenting in 12 hours.

I used a new burner and it took ~ 30 min to boil and I steeped
the crystal malt during this initial time up to boil.
initial gravity was 1.0525 at 60 degF.
Racked to a secondary on June 10 2019

Notes: Cold steep the 8 oz of Carafa in 3/4 gallons of boiled and cooled water for 12-24 hours prior to brew day
to get the dark color and a more mild flavor. You can use a boiled paint bag or just make it like coffee and filter the grains out with a strainer on brew day. You’ll get between 1/2 and 3/5 gallons after the grains absorb the water.
On brew day, collect your boil volume and raise temp to 150 degrees - steep 1 lb Caramunich for 30 minutes. Don’t pay attention to the mash pH calculations in this
Add in the LME and DME, get to boiling then follow hop schedule. At 10 minutes left in the boil, add the cold steeped wort to sanitize.
Chill wort to 66 degrees
Top off with bottled Spring water to get you to 5.25-5.5 gallons in fermenter and make sure wort’s agitated.
Pitch Imperial L17 yeast and try to keep temp between 60 and 66 degrees. Yes it’s a Lager yeast but I’ve heard from a lot of resources that this yeast does really well at low to mid 60 degree fermentation temperature. |

Notes: I have been brewing for about ten years, this is my first Kolsch.
I tried to find a recipe that is based on the original style. I used BYO to find the ingredients and did a search on Brewers Friend to find a recipe that was close. The next step is to cut it down to three gallons. Made sure to keep the starting gravity and IBU's to style. Additional modifications may be required due to availability of ingredients from the brew shop
