  • Boil water for 10 minutes to remove chlorine.
  • Mince ginger
  • Add to mesh brewing bag in a kettle.
  • Add sugar, and citric acid
  • Stir, bring to a boil
  • Cover and allow to cool to pitching temp
  • Remove bag
  • Transfer to fermenter and allow to ferment dry
  • Transfer to a keg
  • Add metabisulfite and and potassium sorbate
  • Backsweeten to taste (maybe16 oz dark muscavado sugar according to the zymurgy article, not sure though) dissolved in boiling water and prepared as a simple syrup)
  • Carbonate to 3-4 vols and enjoy
