Notes: I would bulk ferment for about a month before touching it. Ginger and lemon juice slows the fermentation process down incredibly.
An alternative method is to bottle before it's finished at 1.011 and then pasteurize. |

Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 30 minutes
Remove grains and bring wort to boil
Remove pot from heat and add 6lbs Plisen Liquid Malt Extract and return wort to boil
Add 1oz Chinook hops and boil for 45 minutes
Add 2oz Chinook hops and boil for 5 minutes
Add 2oz Chinook hops and boil for 2 minute
Add enough bottled water to bring the specific gravity to 1.049
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast
Fermentation:
Primary – 10 days, Secondary 10 days
Kegging:
Keg and set CO2 to 20psi for 4-5 days
Set CO2 to 5-7psi, pour and enjoy

protein/ acid rest at 110F for 20 min (4gallons water all-grain)
scoop out 3 gallons of grain/water mix and heat to 65-62C
mash grain for 40-50 minutes in an insulated 3-gallon pot
boil mash for 40min to 1 hr
thoroughly mix boiled mash into rest of grains in the mash tun
mash all grains at 68-65C for 1 hr
sparge grains for ~10 minutes with 80C strike water
boil wort 1hr adding hops at beginning of boil.

Notes: This recipe was developed to use up leftover ingredients from past brew days and kits that had been cannibalized.
Directions:
Bring 1-gallon of water up to 165F.
Add Vienna and Pilsen grains, steep for 30 minutes.
Bring water up to a boil.
Add 8.8 oz LME and 2.69 lb DME
Add 0.25 oz hops.
Boil for 10 minutes.
Add 0.25 oz hops at flameout.
Cool to pitching temps and pitch ½ pkg Safale US-05. You want 2.5 gallons in the fermenter.
Ferment for 10 days, prime with 2 oz table sugar then bottle.
