Notes: Add 1.2kg of sorghum syrup, maltodextrin, the 13g Centennial hop pellets, mineral springwater, Irish Moss & salts.
Boil for 10 minutes. Add remaining hops to schedule.
At the 30 minute mark add 1kg of rice malt syrup and 1.5kg of sorghum syrup. Turn off the heat.
Allow wort to sit for 10 minutes. Strain the wort.
Add enough water to make 21 litres and stir for 5 minutes.
2 litre yeast starter- 1 cup of dark brown sugar and US-05 Yeast
When the beer is 24 C, pitch the yeast starter. This will make 23 litres of beer. |

Notes: Apologies to the owner of the account mad fermentor, i accidentally signed up with the wrong email address only realizing my mistake when i signed out and found i was unable to sign back in.
This is a gruit recipe its a work in progress which i will expand on in time.
The Go-Ferm and Fermaid AT are for rehydrating the yeast. The yeast is a wine yeast it turns out it can be used to brew beer as it eats certain sugars most wine yeast wont. The candi sugar syrup i made myself adding 1 table spoon of LME 1/2 a teaspoon of Go-Ferm and around half of Fermaid AT.

Notes: Fill 1.15 gallons of water in the brew kettle; heat to 158 °F. Shut of heat.
Add the malt extract and stir thoroughly to dissolve completely. You do not want to feel extract at the bottom of the kettle when stirring with your spoon. Turn the heat back on and bring to a boil.
Boil the wort for 10 minutes to sanitize without hops, then chill to 110 °F. Acidify with lactic acid to a pH of 4.5. Pitch the Lactobacillus directly into the boil kettle. Keep the temperature at 110 °F using an electric heater or other method for 36 hours or until the pH reaches 3.5.(Alt keep at room temp for 6 days). Perform a second boil for 45 minutes, adding the hops with 30 minutes remaining. Chill the wort to below 70 °F, pitch the yeast, and ferment until SG 1.014. Add the guava and allow fermentation to finish.
Rack the beer, prime and bottle condition, or keg and force carbonate. |
