Notes: This is a "kitchen sink" brew. I used up what I had laying around since this will be my last brew at this batch size and also batch type since I am shifting to all grain. I finally got myself a Grainfather brewing system and a Kegerator for after the brew so the LBK is being retired.
I used Citric Acid during the boil to lower the Ph and Irish Moss in the last 10 minutes to clarify the brew. I aerated the wort for 15 minutes using an airstone and aquarium pump to help increase the oxygen available for the yeast. Did this prior to pitching the yeast. Had great flocculation of the yeast and hops due to the Irish Moss.
Due to the high OG, I let this ferment for 6 weeks, cold crashed for one day and then bottled into 740 ML bottles with two carbonation drops in each. Bottle conditioned for 6 weeks, then chilled for 2 days. Invited a friend over and we enjoyed it a lot.
Medium amber color and very good clarity. VERY hoppy and great mouthfeel.
Next Batch up will be a Russian Imperial Stout.
Fermented at 70 degrees in my back room.
One final note is that I use an induction hot plate for doing my boil. This allows me to very closely control the boil temperature. If you don't have one, I recommend you get one. Well worth it. I had not boil overs even with the sugars. |

1 pack: Put in half of Red Star Premier Blanc (Dry Champagne Yeast)
Fermentation Temp Range (°F) : 59-86
Set temp for 60.8°– half way is 72.5°
Instructions:
1. Add juice to carboy or use the jug the juice came in.
2. Add 2.4 oz juice concentrate. (Looking for OG: 1.045)
3. Add 1 teaspoons yeast nutrient 1day before yeast.
4. Put in wine chiller at 60.8° +/- 2
Day 2
5. Add .5 teaspoons pectic enzyme, wait 45 min. In the last 15 min. air-rate.
6. After 1 hour (#5 is done) add yeast.
7. Leave in primary 2-4 weeks.
8. Put in secondary Check the SG: (Looking for SG: 1.005 - .999) Target 4 weeks. May add .4 oz Apple flavoring before bottling.
9. Bottle with brown sugar to carb the cider. Read up on this. |

Notes: Bright citrus flavors and a light, silky mouthfeel reminiscent of sunny days by the beach make this beer an instant Summer classic.
Noble German hops early in the boil and sweet orange peel make this beer fruity and balanced. The flaked grains in the grist form a thick, creamy head that persists through the entire glass.
A light haze should be present. If you want a clearer beer may use whirlfloc tablet for fining, last 5 minutes of boil.

- Add all steeping grains to steeping bag and steep as per your
preferred steeping method. Generally, 150*-160* F for 30
minutes.
- Remove grains, (sparge with 170*F water, 8 Oz.) bring back to
boil then turn off heat, and add extract.
Once extract is amply mixed, bring back to a boil.
- Once water comes to a boil, add bittering hops and start the 60
minute clock.
- After flame out cool wort to 80*-85* F, transfer to fermenter &
add cool/cold water to bring total volume to 5.1 gals. ( the
addition of cool water should bring Temp down to pitching Temp
(68* F)
- After Fermentation.... let sit on trub for 1 week then bottle.
- Add 1 Sugar Fizz Drop per 12 oz bottle when bottling.
- Condition in bottle for 3-5 weeks, timing is somewhat flexiable.

| Notes: Simple recipe to use with distilled water. steep the oats at 155 for 25 minutes - bring to boil turn heat off and add LME - boil 45 mins then add the DME in the last 15 of 60 total mins Add all the hops at flame out -> 20 minute whirlpool -> Cool and allow trub to settle for 1hr. Transfer to fermenter and pitch a fruity yeast, ferment it hot. Let it ferment dry and sit on the cake for a while then keg it. Replace hops with whatever you want works great as a leftover freezer hops dumping ground - 6-10 oz works great. Tastes way too good for how easy this is. |
