Notes: The BRY-97 was too slow to start at 67-68 degrees F (3 days and nothing). So, I ended up pitching 4 packets of Safeale-05. Braggot finished at 1.013.
It finished darker than expected. But, delicious. |

Notes: For anyone finding this recipe, I do not declare any wisdom or logic for ANY step here beyond the hopping schedule. This recipe is a constant work-in-progress.
- Soak grains at 170F for 20 minutes in 2 gallons of water.
- Sparge with a gallon at room-temp.
- Boil for 50 minutes (caramelization is the goal)
- Add Cascade in a muslin bag for last 10 minutes.
- Remove the hop bag, add 3g water
- Add whirlpool hops.
- Chill as needed to yeast pitch temp.
- Add Dry Hop at high-krausen (which is going to be basically the point at which you confirm an active fermentation by sight.
- Fermentation is typically visually done by the end of Day 3.

Notes: This is a delightful extract IPA with a light maltiness that profiles Citra’s tropical fruit flavor and aroma.
EXTRACT
OG: 1.059
FG: 1.013
IBUs: 118
ABV: 6%
MALT/GRAIN BILL
8 lb (3.6 kg) Pale liquid malt extract (Note - I changed to 7 lb LME + 0.5 lb DME to get to correct OG)
1 lb (454 g) Crystal 10 malt
0.5 lb (227 g) Munich malt
HOPS SCHEDULE
1 oz (28 g) Citra at 60 minutes
1 oz (28 g) Citra at 30 minutes
1 oz (28 g) Citra at 15 minutes
1 oz (28 g) Citra at 0 minutes
2 oz (57 g) Citra at dry hop
DIRECTIONS
Heat 5 gallons of water to 170°F (77°C). Steep the grains for 30 minutes. Bring the wort to a boil. Once you reach a rolling boil, add a quarter of the malt extract. Boil for 60 minutes following the hops schedule. After flameout, add the remaining malt extract.
YEAST
1 packet Safale S-05
BREWER’S NOTES
Let ferment at 68°F (20°C) for 2 weeks. After fermentation, add the remaining hops to the vessel. Dry hop for 1 week, then bottle or keg.
Brewed 11/28/21. Used imperial flagship yeast and 1lb of 10 degree cara? Malt as they did not have crystal. Bumped up DME to 15 oz vs 8 oz in recipe as I wanted to be closer to 6%. At 5 gallons the OG was 1069. Fermented for 10 days with FG of 1015. Adjusted yeast attenuation up.
Drunk after 2 weeks in keg. Lovely aroma and citrus taste, but too much bitterness that lasted a while. |

1 Danstar Nottingham Dry Ale Yeast
Procedure:
Start with 2.5 gal tap water, add grains to cold water, heat water to 165 degrees and steep grains for 30 minutes once water temperature reaches 165 degrees
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Liquid Amber Malt Extract and return wort to boil
Add 1oz Simcoe hops and boil for 60 minutes
Add 1oz Simcoe hops and boil for 45 minutes
Add 1oz Simcoe hops and boil for 30 minutes
Add 1oz Centennial hops and boil for 5 minutes
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.050
Add Danstar Dry Ale Yeast
Fermentation:
Primary – 2 weeks at 62-68degrees
Secondary – 4 weeks at 62-68 degrees
Add 1oz Centennial hops to secondary 5-7 days prior to bottling beer
Bottle beer 5-7 days after last dry hop addition
Bottling:
6 weeks after brew date
Use .3oz of corn sugar per gallon of beer
Condition beer for 4 weeks at 62-70 degrees

Notes: This was originally intended to be a version of 21st Amendment's Brew Free or Die IPA (which is delicious af). But I decided to take it up a notch by reducing the boil to 60 minutes and cranking up the overall intensity a bit.
Brew and dry hop like you would any other IPA. There's nothing complicated here.
I call it The Sandy Pickle because my nickname is Pickles and my step mom's name is Sandy and this was brewed at her request. |
