Notes: Mix 4 gallons of spring water with 18lbs of honey. Add nutrients and yeast. ferment at 68F.
After fermentation, add crushed campden tablets and potassium sorbate to halt fermentation. Wait at least 24 hours then transfer to a secondary and back sweeten with honey to taste.
At this point you can bulk condition or bottle condition. I prefer to bulk condition for a few months then bottle condition for a few more.
It is a super easy recipe and makes a great final product. If you want a melomel you can simply back sweeten with the fruit or berries or your choice. |

Notes: Pour 2 gallons of water into brew kettle, steep grains at 160 - 170 degrees f. for 20-30 minutes. DO NOT BOIL GRAINS!!!! Remove grain bag and allow it to drain into brew pot do not squeeze. Bring water to a boil, add malt syrup while constantly stirring as to not allow it to burn on bottom of kettle. continue until it returns to boil. Add malto dextrin, add nothern brewer hops. Make sure pot does not boil over!!! Boil for 55 minutes, then add finishing hops,boil for an additional 5-10minutes. total boil time is 60-65 minutes. Cool wort to roucghly 70 degrees add yeast. |

Notes: Use 6 gallons (23 L) of water in the brew kettle; heat to 158 °F (70 °C). Add the malt extracts and stir thoroughly to dissolve the extract completely. You do not want to feel liquid extract at the bottom of the kettle when stirring with your spoon. Turn the heat back on and bring to a boil.
Boil the wort for 60 minutes, adding the hops at times indicated. The first wort hops are added to the kettle just after the malt extract is dissolved but before bringing to a boil. The 0 minute hops get added right after the heat is turned off. Stir the wort gently and allow to cool to 180 °F (82 °C) then add the hop stand hops. Allow to stand for 20 minutes then chill to 64 °F (18 °C) and rack to the fermenter.
Oxygenate, then pitch the yeast. Start fermentation at 64 °F (18 °C), allowing temperature to rise naturally as fermentation progresses. Mix the dry hops and divide into three equal portions. The first portion gets added after two days of active fermentation. The second portion gets added at the end of fermentation. The third portion gets added three days after fermentation ends. Allow each dry hop addition to be in contact with the beer for two to three days, then remove.
Rack the beer, prime and bottle condition, or keg and force carbonate to 2.5 volumes. Do not filter or fine the beer. |

Tastes much like a chocolate pecan, quite tasty!
- 2lbs. Clover infused honey/w 3c. roasted pecans 5-10 min.
*Note - Pecans have a TON of oils that must be removed or it will suppress the head on the beer. Start whatever process you use early on before even thinking about the brew process. Many thanks to Gabriella and Carlos at Omnipollo Brewery Stockholm, for their pointers. Or add 1 tsp APEX extract to an empty 5 gallon keg and racked on top of it
Allow your steeping malts and 1/2 of the infused honey pecans to soak in 1 gallon of heated spring water for 30 minutes. Do not to exceed 170° F. Rinse with 1 gal 165° spring water.
Strain the flavoring malts and pecans or take out the grain bag, and add the rest of your water to the kettle, bring to a boil and add bittering hops and malts and add 1/4 of remaining pecans. At flame out add the rest of the pecans.
**Actual ABV is a bit less but the calculator sees the honey infused pecans as fermentable. |
