Pitched yeast directly into primary and then aerated.
I added the oats to the steep and moved them over to the boil kettle. Next time would just add them to the kettle and not bother to steep them.
Active fermentation in 6 hours. Moved to secondary on day 2 and dry hopped. SG was 1.017.Almost didn't catch it in time. Very aggressive fermentation. Tasted fairly bland at day 2. Above calculations show IBU will be too high but does not seem to be the case. |

Difficulty in cooling down. Ended up pitching at around 70degrees. The near frozen bottles of spring, froze and split so I had to buy new and freeze.
Decent bubble just not vigorous. ON racking after 8-9 days, FG was closer to 1.020. Incredibly cloudy and full of shit (tangerine rind and hops and yeasties. Difficulty siphoning. Had to clear hose and valve several times. Tried to sterilize at every point but difficult.
Racked again after another week. Added 1 tsp gelatin to 2/3 cup water. Valve was open and I lost about a beer's worth. Crap. Added another tsp to 1/2 cup and siphoned remainder. Clarity was better, no chunks but still hazy. We'll see how gelatin works. FG is now 1.015.Taste was decent with that hint of orange but I was tainted by the thought of all that went wrong...
Learnings - Freeze water bottles but watch for over freezing. Use ice bags for the cooling of the wort still in the kettle. Quick chill at all costs (or not sterilization).

Notes: Most of the notes would be about picking and drying the homegrown hops. Still had difficulty getting down to pitch temp even with ice bath and then to add chilled spring water.
Brewed 8/23/15.
(8/30/15) Added 6 oz to primary after 1 week of fermentation. With 6 gal plus hops, there is almost no room left in bucket. will sort of swish around hops to get better soak. Will have to do a double filtering or something to reduce the cause of clogged bottle filler. |

Notes: 1. Fill brew pot with 4 gallons water.
2. Stir in water agent and bring water temp to 155 degrees.
3. Steep Carapils, caramel/crystal, and honey malts for 30 minutes.
3. Add DME and bring to boil.
4. Add CTZ hops after 30 minutes of boil.
5. After 45 minutes of boil, add lemon juice, lemon rinds, and 32 oz chopped ginger root.
6. After 65 minutes of boil, remove lemon rinds, add molasses, honey, maltodextrin, lemon zest, remaining chopped ginger root, yeast nutrients, and Amarillo hops.
7. After 70 minutes of boil, add Hibiscus syrup and whirl floc tablet.
8. After 75 minutes, turn off heat and add Amarillo hops for 15 minute hopstand.
9. Top up to 7 gals of wort with distilled water, cool wort to 65-70 degrees, transfer to primary fermentor, pitch yeast, aerate.
9. After 7-10 days of fermentation, transfer to Corney keg.
Found the origins of this recipe on the internet 20 years ago. Continue to make changes over time. Recipe began with 48 oz of chopped fresh ginger root; pared it down to 42 oz (amount can certainly be adjusted to fit taste). Replaced cane sugar in original recipe with molasses. Can use any honey but prefer orange blossom honey. Lemons, molasses, and honey add subtle aromas and taste. Hibiscus flower syrup provides subtle flavor and some red color addition. Whether or not you like the taste of the end product, the brewing aromas are worth the effort! Has all the attributes of Ginger Rogers: a charmer with a taste for drama, flair, and adventure; a romantic with a big heart and a killer sense of style. And no matter with whom she danced, she did it all backwards and in high heels!
