Yeast: Gozdawa lager yeasts 7g
Fermentation in FV for 6 weeks, not 2-3 weeks as is stated on can. Flavor and taste increasing from week 3 to week 6. Hoppiness only after week 4. Steep even longer than 6 weeks, use different yeast.
Used 1 kg Coopers beer enhancer no. 2 instead of 1 kg of DME. Priming with 150 g of dextrose pitched to beer not bottles.
I've bottled on may 20th 2017 and fist tryed it on may 31st. It's already a vey good beer. |

Notes: (Night Before Brew day)Prepare Spices and place them in a fine mesh bag. Prepare Pumpkin: Spread puree into a large baking dish. Roast at 400 degrees F (204 C)for about an hour, stirring every 15 minutes, until fairly dry and caramelized but not burned. Put in a fine mesh bag.Cool cover and refrigerate until brew day. On brew day remove from refrigerator and bring to room temp before using.
Brew Day: Bring 6 gal(23L)water up to 158 degrees(70C)Place Pumpkin (still in mesh bag) and the CaraVienne, brown, and chocolate malts in another mesh bag, and steep in hot water for 30 minutes. Remove the mesh bags,(do not throw away) then turn off heat. Add the liquid Malt extract and stir thoroughly to dissolve extract completely, making sure not to burn it. Put the pumpkin mesh bag back in, turn the heat back on and bring to a boil. Once boiling , remove the pumpkin, allowing liquid to drip back into the kettle. Boil the wort for 60 minutes, adding the hops, sugar and molasses at the times indicated in the recipe. |

This is the flavor base for the additions of
2 oz Whiskey Barrel chips
2 vanilla Beans
both above soaked for 5 days in 16oz Jack Daniels
Brew Day follows extract kit instructions. Straight to Fermenter. Try to Pitch Yeast at 60-65F.
After 1 week, begin soaking additions.
After 2 weeks, Rack to secondary, add flavorings to Hop Bag, pour through bag so whiskey goes into secondary as well.
Allow to steep for 1 week. Cold Crash for 48 hours, Rack to Keg.
Pressurize to 12 psi @ 40F for 1 week. Enjoy. let sit for 4 more weeks to smooth out flavor. |

Notes: Interesting and a fun beer to brew as it uses grains you don't normally see. I don't like the taste of Sorghum but this recipe blends everything together well and the crispness of the grapefruit is quite refreshing. Hardest part was coming up with a name that rhymes with Sorghum. lol
*Rinse the specialty grains thoroughly and drain all of the water out. Spread the grains onto a baking sheet and place them in a pre-heated oven at 300° F for an hour and then at 350° until they just start to turn toasty, keep a close eye on them, you don't want a burnt taste, just slightly more than a tan color. Let them cool. Steep grains in 4.5 gallons of water. Turn off heat and stir in sorghum extract and Belgium syrup. Bring to a boil and add hops.
**Grate the grapefruit rind being careful not to get any of the white pith under the rind its very harsh and bitter. Add zest at last 5 min of boil. |
