| Notes: This is my attempt at an easy brew to sort-of replicate the flavor and nose of a Sierra Nevada Pale Ale. It works well enough for me. Everyone who tried it loved the result. It's a nice even, clean beer with a great nose thanks to Cascade. It's a great session beer at just under 5%. Steep a bit of cara red to give it a little more amber color. This is a concentrate, 2.5 gallon brew then blended with 3 gallons of cold water in fermenter after chilling. Lost 1 quart of water to steam and about 1 quart in trub. I bottled exactly 5 gallons. |

Notes: 5/11/24-Pear Cider Base to 4.9%, +3/4G H2O + 12oz. FAJC + 2#Agave Nectar, 3tsp Yeast Food, Vintner's Harvest C17 Yeast-2 packs. The sugar is the equivalent # of grams of FAJC. It's lower than expected. I may want to add more to boost ABV.
7/11/21-Made:12/6/20 6#-4# Pear to Apple, 5%, Kegged: 5/2/21 w/ 1qt Pear Juice primer, no sulfites, carbonated at room temp, dry, tart, cold-crashed and on tap. Like a traditional Perry, tart, dry, lightly pear-flavored and no apple hints.
**1st batch was hit with K-Meta and Sorbet to stun yeast and then back sweetened with 1 qt. Pear Juice and force-carbonated. This was good, the sweetness was not too much. |

Brought apple juice to build and mixed in honey, brown sugar, and turbinado.
Original Instructions
This brew is an iteration of a few ciders using different grain bills (juice to honey ratios) with various yeasts.
Notes:
5lbs = 5 Gal. Apple Juice (if this is your first cider, use organic juice without potassium sorbate; it will kill the yeast and not ferment). Don't think I used maltodextrin here.
The rest of the grain bill is accurate. If a little less kick is needed, try one of the alternates below. I'm using WLP001 this time because of its tolerance for high alcohol, higher fermenting temp and because it finishes sweater (personally I prefer the dryness of the EC-1118 but then it's closer to Cyser territory).
I'm thinking ABV should be close to 10%. Also, because OG will be relatively high I'm using a starter. One could also double pitch with decent results. I've pitched one yeast pack before and still not had any problems.
Basic steps: Boil 2 gal. apple juice and add honey stirring constantly. (Honey is heavy and will sink to the bottom. It burns easily like candi syrup.) Boil juice, honey and sugar together for at least 20 minutes. Combine wort with remaining juice once temps drop to pitching levels.

Notes: One 11.5 gram packet of US-05 was used for this brew, and an apparent attenuation of 82% was achieved. The yeast was rehydrated in the wort, per the manufacturer's instructions.
A second packet of US-05 or a yeast starter would have achieved greater attenuation, but this particular brew benefits from a subtle sweetness.
No off flavors were present in the finished product.
Beer was bottled at approximately 70°F/21°C using 5 oz. of dextrose to achieve approximately 2.5 vols of carbonation. |
