Brewed 1/10 Secondary with added chocolate nibbs 4 oz 1/14/14 and then bottled 1/31/14 useing sugar tabs for carbonation..good cherry taste at bottling

Notes: This is a clone of a favorite (Fresh Squeezed).
Mash temp 148f-150f should result in a more complete conversion to simple sugars for fermentation so its not such a heavy IPA.
For Fresh Hopped flavor:
In the hop listing we add .15 Citra at 0 min flame out for aroma and flavor. Let it Hopstand (I used whirlpool for lack of option) for 10 mins to add the IBUs.
After fermentation (give it 2 weeks) dry hop with .20 Citra + .20 Mosaic for another 5 days.
Transfer to secondary and cold crash in the fridge for 2 days or more before priming and bottling.
Depending on your boil off speed you may need to add small amounts of water during boil to keep with in the 1 gallon final volume. Or top off in fermenter before aerating. |

Notes: Great colour following fermentation, very smooth taste. Not overly bitter, middle of the range for the style.
Bottled 45 x 500ml bottles from the batch.
Tasted a bottle 5 days after bottling - lovely bitterness level and very smooth. CO2 starting to develop after 5 days but will need another 1-2 weeks before it's really ready. |

Notes: - Brewed on 22 June 18
- Scraped wild yeast from 2 x petri dishes (very funky!) that had been sitting for approx. 2 months undisturbed...no idea on weight/volume of yeast...rehydrated in about 1/4 cup of sterilized water. House is kept at 71 degrees but the experiment is being kept in the pantry which gets a little warmer due to outside wall...probably 75 degrees avg.
- Once pitched, no activity for 24 hours, then vigorous fermentation for about 12 hours, then no visible fermentation for 24 hours (may have been a loose seal), then fermentation restarted and has been going slowly since (today is 4 July). Hints of banana with a little funk...not unpleasant.
- Once fermentation appears to cease I will take a gravity reading, wait 3 days and measure again. If no change, and calculates to at least 5% ABV I will bottle, charge, and wait 2 weeks before tasting. If below 5% I will add a 1/4 teaspoon of Safale US-05 to see if fermentation restarts.
- Took a gravity reading 7 Jul 18...1.022 (4.59%). Got a better whiff...quite a pleasant smell.
- Took a gravity reading 15 Jul 18...1.022 (4.59%). The appears yeast is settling out because the beer is now very clear. I added a very small amount of Safale US-05 to see if it would finish up any residual sugars. I took a chance and put 4-5 drops on my tongue...great flavor...hints of pepper. Reminds me of a saison. If there are any residual sugars I expect the added yeast to begin work within 24 hours. I will take a final gravity reading and bottle next week.
- Took a gravity reading 18 Jul 18...1.022 (4.59%). The addition of the Safale US-05 did not appear to spark any additional fermentation. So I added 2 oz of honey directly to the beer...not sure how smart this is, but I swished it around to dissolve the honey. This time, once fermentation stops I will take a gravity reading and bottle immediately. Still smells great.
- 19 Jul 18: 24 hours and no indication of activity. There may not be enough oxygen for the yeast so I'm going to do something else I'm not sure is such a good idea...I'm going to oxygenate the beer for about 5 secs to see if that gets anything going. |

Notes: 1. put 2~3g of sea salt in 7L water. and heat it up to 67°C(152.6℉).
2. put the caramel malt and mash it for 1hour.
3. heat it up to 78°C(172.4℉) and mash out for 10minutes.
4. exclude malt and put LME and lactose in wort.
5. boil the wort and put 1 whole garlic, 15g of ginger and hops in a strainer.
6. after boiling, exclude the strainer with subtitute.
7. chill it that can put the yeast to ferment.
8. put the dry yeast, 1 whole garlic(grilled at 190°C(374℉)), 1 korean red pepper(seed sterilized) in wort. and ferment it until its gravity pulled down to FG.
9. make red pepper extract(put in 30g of vodka for 1 week.) and put it in fermentation-finished beer.
10. put the white sugar in beer. bottle it and make the fizzy texture. |

Notes: Belgian Candi Sugar is Demerara Sugar.
Steep grains UNDER 170F.
Preboil for 5 minutes before first hop addition.
Add yeast nutrient before pitching yeast.
First yeast should be a strong ale yeast. Aerate very well after pitching (aquarium pump for 1 hour).
After vigorous fermentation slows down (8-10 days), alternate between 1oz pure cane sugar and 1oz Demerara sugar additions every day for 5 days straight.
A few days after primary fermentation slows down, transfer into secondary carboy that has the Cascade hop addition and add the super high gravity yeast . Aerate very well (aquarium pump for 1 hour).
Continue to add sugar additions each day for the next 5 days (including this day you transfered). Secondary fermentation should last 1-3 weeks.
2 weeks after all fermentation activity subsides, beer is ready to package. Add champagne yeast at bottling. While transferring beer into bottling bucket, us a cup of beer to dissolve champagne yeast and add to bottling bucket with priming sugar in 1 cup water.
Beer ready to drinnk after 3 weeks. Age well, over a year. |
