Notes: A Christmas themed ale based on Charlie Papazian's Christma ale from Complete Joy of Homebrew 3rd Edition. I've been brewing with this one and tweaking it along (i.e. "misreading the recipe and using the wrong amounts, changing hops to whatever I have on hand, etc") for 3 years now and it always gets rave reviews. This one follows last year's version which was the best of the bunch.
Steep grains in 1.5 gallon water for 30 minutes
Add LME and Cascade hops and enough water to make it 2.5 gal
Boil 60 minutes
Add orange peel and ginger with 8 min remaining
Add honey at 2 minutes and turn off burner.
After some cooling, sparge wort into fermenting vessel.
Steep cinnamon stick 5 minutes in near boiling water to pasteurize, add to fermenting vessel.
Pitch yeast.
Rack after one week, bottle after another week. |

BOIL:
Add lactose 10 mins remaining in boil.
SECONDARY FERMENTATION:
Slice vanilla beans length-wise and scrape out seeds.
Toast coconut on a cookie sheet at 300F until golden brown, stirring often.
Add both ingredients to fermenter for secondary fermentation for 1-2 weeks. |

Notes: Belgian Wheat Beer
Literally, “white beer,” this Belgian wheat beer got its
name because of its cloudy haze (it’s actually strawgold
in color). The smooth mouthfeel, grainy flavor, and
massive head retention of wheat malt meets dry and
phenolic Belgian witbier yeast and the tart, enticing
character of coriander and bitter orange peel — very
complex and delicate. An appealingly crisp, dry, and
refreshing alternative to generic warm-weather
lawnmower beer. |

Notes: This was a monster ferment. I had the blow off hose in the primary for 5 days. Detected some apple esters initially, but after 2 weeks in the primary the beer cleaned up really nice. I would describe this beer as being very clean and crisp. I added an ounce of dry hop pellets after racking it to the secondary. After 5 days of dry hopping I removed the bag and added a fresh bag of another half ounce of citra and one ounce of mosaic hops. |

Notes: Very light and extremely fruity IPA which is sure to blow your taste buds away! Hopped with THREE TIMES the typical American IPA levels, which citrus notes central to the aroma and flavour profile.
Use English or American Ale yeast.

For 19L batch:
Place crushed malt in 7.5L water at 68C and steep for 30min. Strain, rinse with 3L hot water. Boil the remaining ~9.5L liquid with malt extract and boiling hops for 60mins.
Ferment at 21C
After ~1week or when fermentation shows signs of stopping, rack to secondary and add dry hopping pellets.
If possible, cellar beer at 12.5C for ~1 week. |
