Notes: Very light and extremely fruity IPA which is sure to blow your taste buds away! Hopped with THREE TIMES the typical American IPA levels, which citrus notes central to the aroma and flavour profile.
Use English or American Ale yeast.

ABV: 5.2%
For 19L batch:
Place crushed malt in 7.5L water at 68C and steep for 30min. Strain, rinse with 3L hot water. Boil the remaining ~9.5L liquid with malt extract and boiling hops for 60mins.
Ferment at 21C
After ~1week or when fermentation shows signs of stopping, rack to secondary and add dry hopping pellets.
If possible, cellar beer at 12.5C for ~1 week. |

Notes: Belgian Wheat Beer
Literally, “white beer,” this Belgian wheat beer got its
name because of its cloudy haze (it’s actually strawgold
in color). The smooth mouthfeel, grainy flavor, and
massive head retention of wheat malt meets dry and
phenolic Belgian witbier yeast and the tart, enticing
character of coriander and bitter orange peel — very
complex and delicate. An appealingly crisp, dry, and
refreshing alternative to generic warm-weather
lawnmower beer. |

Notes: Steven gave me some ingredients for xmas. I added some other items and created this brew. Should be interesting. This is the first time I've made a yeast starter and I am impressed. Obvious fermentation activity within three hours and it's vigorous.
Chilling the wort was a pain. Even the snow bank didn't help. This will be the last time I do this without a chiller.
Final volume is 5.5 or maybe 5.75 gallons. The OG was over 1.070 so we added as much water as I could comfortably get in the bucket.
Update: 2/6 We sampled the first bottle this weekend. Success! Nice aroma of coffee with a hint of dark chocolate. There is black and then there is midnight black. Then there is this beer....dark! The aroma entices you to drink and the initial taste entices you to take more. Then the bitter hits you. Not a hop bitter. Very bitter but in a very good way. Not a beer for everyone and not for all the time. This would make an entertaining black and tan. I'll be doing this again and cutting back on the darker malts but wow is this good. |

Notes: Amarillo and Simcoe hops dominate the late additions. After one sip, it’s no wonder why breweries can’t get enough of these hops. Slight malt sweetness initiates the taste buds only to give way to a dominate citrus and pine finish. The floral, tropical aromas will invite you to drink this all evening long.
