Double Mash as my Mashtun only holds about 15 pounds of grain. Once the first mash is done, drain off the wort and soak that in 3 gallons of water in a SS pot. Then clean out the mash tun and fill it with another 5 gallons of water and proceed with mashing the second 15 pounds of grain.
MaKe 3.5 liter starter of wlp-004 (Irish Ale) and step it up 2 times. Also going to use WLP-099 (Super High Gravity) days after initial pitch.
Primary will be about 3 weeks and secondary will be about 2 months with Heaven Hill Whiskey and some jack daniels bourbon barrel smoking chips for the wood.
Bottle with no more than about 3.5 or 4 ounces of cane sugar.
Takes about 3 or 4 months before they are actually drinkable. Best after about 1 year.

OG 1.096, FG 1.026- 9.2% ABV
We split this batch, 3 gallons each
8/7 After a month of conditioning, I added 10oz of toasted
coconut and 2T of 10X vanilla extract.
8/17 tasted, needed more coconut. Vanilla overpowering. Added
6 oz more toasted coconut.
8/24 flavor was still light, added 10oz more toasted coconut
9/4 coconut pops but body is thin, back sweetened with coconut
sugar- simple syrup 50/50 water and sugar, 3/4 c total. Kegged
and carbed
9/14 Tastes like a mounds bar, delicious. The coconut sugar
gives a bit of a burnt caramel flavor but helps the coconut
stand out. Next batch will get lactose instead.

Notes: Mash the crushed grains at 150°F (66°C) for 60 minutes. I use the rate of 1 pound (454 g) of crushed grain per quart (946 ml) of water that is heated to 15°F (8°C) higher than my targeted mash temperature because there will be about a 15°F (8°C) drop in temperature when the grains are added. Mix well and adjust the mash to the chosen temperature with hot or cold water. Mash in an insulated vessel for 60 minutes. Vorlauf until the wort runs clear. Sparge with 168°F (76°C) water until you get 6 gallons (22.7 l), which will be boiled down to 5 gallons (19 l). Boil the wort for 60 minutes following the hops schedule. After chilling the wort to below 80°F (27°C), pitch the yeast.
Ferment at the recommended temperature for your yeast strain (refer to the yeast lab specs, roughly 65–70°F/18–21°C). Transfer the beer to a secondary fermentor after 10 days of primary fermentation. Continue fermenting at 65–70°F (18–21°C) until all signs of fermentation are gone, usually another 2 weeks. On bottling day, condition with ¾ cup of corn sugar (dextrose) or 1¼ cup of dry malt extract (DME). Rest bottles at 65–70°F (18–21°C) for 10 days until you achieve carbonation. Then enjoy. |
