Notes: My efficiency was extremely high on this one with OG = 1.060 so ABV will hinge on that. I use BIAB and dunk bag in 2 gallons of 170F water for a ghetto sparge then add the liquid from tun and top to 6.5gal boil.
Simcoe bittering and Cascade late addition/dry hop combo was spot on. Tasted like a mock IPA without the lingering bitterness. My wife loved this beer and I think she drank more than me!
Great 3-week beer start to finish (kegged). |

Notes: I found another recipe based on a podcast from years ago. I later read that this is actually Carastan malt which is a British medium crystal malt. Using Pacman 1764 @ 60F. Bittered with Perle and Sterling. 40 IBUs and 16 SRM
I keep cranking the Sterling up...need much more bittering. up to 2.5 Oz @ 90 mins, an Oz more @10 mins plus an Oz of Perle. Now at 70 IBUs. Then I figured out I don't have any Sterling left, so I am subbing Czech Saaz - keeping IBUs at 41.
Imperial A18 Joystick gives you 1.021 Finishing Gravity
I adjusted this batch with Acidulated malt. |

Notes: Recipe modified from Gordon Strong's, and using his double decoction schedule (modified for the sparge for my BIAB setup):
This recipe uses a hybrid step and double decoction mash with a mashout. On brew day, mash in the Pilsner, Vienna, and Munich malts at 131 °F (55 °C) and hold for 10 minutes. Pull a thick decoction (about 1⁄3 of the grain mass) and rest the decocted portion at 145 °F (63 °C) for 15 minutes, 158 °F (70 °C) for
15 minutes, then boil for 15 minutes. Recombine the decocted portion with the main mash, hitting 145 °F (63 °C) in the main mash. Hold for 15 minutes, then pull a thick decoction (about 1⁄3 of the grain mass) and boil for 15 minutes. Recombine, adding in the Caramunich, Caramalt, and Carafa Special malts, hitting 158 °F (70 °C) in the main mash. Hold for 15 minutes. Then sparge (I dunk sparge in new pot).
His recipe calls for Carared - I didn't have, so subbed in Caramalt.
