Notes: Toast the coconut prior to brewday. Only use UNSWEETENED Coconut flakes or shredded. I also drop 2 oz of coconut extract in the keg before the transfer. Note that coconut drinks wort...so if you're short of wort for the fermenter - leave it out.
I am hacking the Brewer's Best Robust Porter kit...this is an attempt to get my own AG Robust Coconut Porter. The kit has 6.6 lbs of Amber LME and the last 6 malts as steeping grains. |

Here is the recipe for 7 gallons of wort with a mash efficiency of 82%:

8.75lb Domestic 2-row
0.5lb Crisp Crystal Malt 77L
0.5lb CaraPils
0.2lb Honey Malt
0.1lb CaraVienne Malt
Mash at 70C for 60 minutes
Boil for 90 minutes
Hops:
20g Warrior (38.2 IBU) at 60 min
7g CTZ (7.3 IBU) at 30 min
10g Amarillo (3.1 IBU) at 10 min
10g Simcoe (4.3 IBU) at 10 min
1oz each Simcoe, Amarillo, Chinook, Citra, CTZ at 0 min

Notes: Mill the grains and dough-in targeting a mash thickness that will enable your system to achieve the necessary pre-boil volume and gravity. Hold the mash at 150 °F (66 °C) until enzymatic conversion is complete. Infuse the mash with near boiling water while stirring or with a recirculating mash system raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (25 L) and the gravity is 1.052 (12.9 °P).
The total wort boil time is 90 minutes. Add the bittering hops as soon as the wort starts boiling. With 30 minutes remaining in the boil, add the second hop additon. Add Irish moss or other kettle finings with15 minutes left in the boil. Add the remaining hop addition at 5 minutes. Chill the wort to 65 °F (18 °C) and aerate thoroughly. The proper pitch rate is 16 grams of properly rehydrated dry yeast, 2.3 packages of liquid yeast or 1 package of liquid yeast in a 2.7-liter starter.
Ferment at 65 °F (18 °C) until the yeast drops clear. Allow the lees to settle and the brew to mature without pressure for another two days after fermentation appears finished. Rack to a keg and force carbonate or rack to a bottling bucket, add priming sugar, and bottle. Target a carbonation level of 2.5 volumes.
FOR COCONUT:
Toast ~1lb of unsweetened, shredded coconut on parchment paper at 250 degrees until golden-brown. Broil at lowest temp if needed for final browning.
Fill hop-filter with coconut and add directly to cold keg. Flavour will start to become apparent within 24 hours, and slowly grow over time. |

Notes: Actually finished at 1.017, so that would make it 3.4% - however, as it was mashed at 68-70c, this may a more viscous wort that will take longer to completely ferment out.
I left it in primary for 3 weeks - it fermented vigorously for the first 2-3 days, then subsided to about 1.020. I then went on holiday for 2 weeks and when I came back it was 1.017/1.018.
It also seemed like it had a fairly large amount of dissolved CO2 - usually when I taste samples at this stage they seem completely flat. This tasted slightly carbonated.
So for that reason I bottled it with only 50g of sugar - equating to 2g/litre. This is lower than the usual level of 3g/litre I bottle with.
Also - I used my own home grown fuggles, and unusually for bittering hops I could really taste the hop character and some aroma in the beer.
However, the bottles exploded and I had to tip them down the sink. Assume I bottled too early. |
